Grandma's Yeast Rolls Recipe: How to Make It image

My grandmother use to make these rolls for family get-togethers and holidays. The applesauce adds so much flavor. —Nancy Spoth, Festus, Missouri

Yield 2 dozen.

Number Of Ingredients 7

1 package (1/4 ounce) active dry yeast
1 cup 2% milk (110° to 115°)
1/4 cup sugar
1/4 cup unsweetened applesauce
2 large egg whites, room temperature, beaten
1 teaspoon salt
3-1/2 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm milk. Add the sugar, applesauce, egg whites, salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes (dough will be slightly sticky). Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour., Turn dough onto a lightly floured surface; divide into 24 pieces. Shape each portion into an 8-in. rope; tie into a knot. Place on 2 baking sheets coated with cooking spray., Cover and let rise until doubled, about 30 minutes.Bake at 375° until golden brown, 12-16 minutes. Remove from pans to wire racks to cool.

Buttery and fluffy, these yeast rolls will be a heavenly addition to any meal. They're slightly dense in texture with a hint of sweetness. It's an old-fashioned recipe just like grandma used to make. They take a little longer to make and a little elbow grease to get the dough kneaded, but it's well worth the wait and work. The result is scrumptious yeast rolls.

4 tablespoon(s) margarine
1/3 cup(s) shortening
3/4 cup(s) sugar
1 tablespoon(s) sugar
3 large eggs
4 package(s) active dry yeast (1/4 oz. size)
1/2 cup(s) lukewarm water
7 1/2 cup(s) all-purpose flour
1 tablespoon(s) salt
1 1/4 cup(s) milk

Steps:

  • Cream margarine and shortening with sugar until light.
  • Add eggs slowly, blending well between each addition.
  • Dissolve yeast in lukewarm water (110 degrees; be sure that water is not too hot).
  • Sift together flour and salt.
  • Add half of the flour to the egg mixture and mix well.
  • Then add half of the milk to the egg mixture and mix well.
  • Add dissolved yeast.
  • Add remainder of milk and flour to make a soft dough.
  • Cover dough; let rest for 10 minutes.
  • Turn dough out onto a lightly floured surface and knead for 8 to 10 minutes or until dough is smooth and elastic.
  • Place dough in a lightly greased bowl large enough to hold the dough when doubled in size, turning once to grease the surface.
  • Cover; let rise in a warm place (90 F) until double in size (about 2 hours).
  • Fold dough over from 4 sides to knead lightly.
  • Cover and let rise again until double in size.
  • Turn dough out onto a lightly floured surface and shape as desired.
  • To Make Cloverleaf Rolls: Shape dough into small balls. Three balls should half-fill a greased muffin pan.
  • Brush with melted margarine or butter.
  • Let rise in a warm place (90 F) until double in size (about 25 to 30 minutes). Do not let rolls "over-rise". Bake in a pre-heated 350 F oven until both the top and bottom of rolls are golden brown, about 10 to 12 minutes.
  • Remove from oven and brush top of rolls with melted margarine.

  • I am sending along a recipe from each of these ladies. The pineapple turnovers from Grandma Elliott are one of the few things she made which were absolutely wonderful - so do not let my comments on her cooking abilities scare you away from attempting these treats! Grandma Todd's rolls were famous throughout Park County, Indiana, where she lived and worked. Sometimes she would make the dough into cinnamon buns, instead of plain dinner rolls. However you make them, they are delicious. Heat together 1 c. water, butter, sugar and salt; cold to lukewarm. Dissolve yeast in 1/2 c. hot water. Add in to lukewarm sugar mix. Beat in Large eggs and 1 c. flour. Add in approximately 4 c. more flour to make a soft dough. Knead on a floured board till smooth and elastic, approximately 10 min, refraining from adding more flour, unless necessary. Place dough into a greased bowl, turn to coat all sides, cover and allow to rise in a hot spot till doubled in size. Punch down dough and form into rolls of desired size. Place into greased pans, cover and allow to double. Preheat oven to 375F. When rolls have proofed, place in oven and back till golden, approximately 20-25 min. Remove from oven and brush with melted butter. Serve warm or possibly cooled.

GRANDMA NASH'S HOT ROLLS | JUST A PINCH RECIPES
My Grandma Nash used to make these rolls for each meal. However, nothing was measured with a cup or measuring spoon and nothing was written down. When she was ill with cancer, back in the early 60’s, my dad carried his mother to the kitchen and had her scoop out all the ingredients. My mom carefully measured everything out so this delicious family recipe would not be lost with Grandma’s passing. She died less than a week later. We share it with all those who love a great hot roll recipe. This has no dairy (unless you brush the tops with real butter) or eggs, so it can be made for a Vegan’s diet as well. Enjoy!
