3/4 cup raisins
1 cup hot water
1/2 cup shortening
2 cups sugar
1 large egg
2-1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon each ground cinnamon, cloves and nutmeg
1-1/2 cups applesauce
1/2 cup water
1/2 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

1 teaspoon cinnamon
2 cups sugar
1/2 teaspoon nutmeg
2 eggs
1/4 teaspoon allspice
2 1/2 cups sifted all-purpose flour
1 1/2 cups applesauce
1 1/2 teaspoons baking soda
1/2 cup raisins
1 teaspoon salt
1/2 cup pecans

Steps:

  • Cream butter and sugar till light.
  • Add eggs, beating well after each addition.
  • Sift dry ingredients together and add to creamed mixture alternately with applesauce.
  • Stir in raisins and pecans.
  • Turn batter into greased and lightly floured pan (13 x 9 x 2-inch).
  • Bake at 350 F about 45 minutes to till done.
  • Cool in pan.
  • (an additional 1/3 cup raisins can be substituted for the 1/2 cup of pecans, if desired).

  • Make the batter: Preheat the oven to 350 degrees F. Lightly butter and flour a 6-cup Kugelhof or Bundt pan. Whisk the flour, 1/4 cup cocoa powder, baking soda, baking powder, salt, cinnamon, allspice, and cloves together in a large bowl and set aside. Cream the butter and brown sugar until light and fluffy in a large bowl using a mixer set at medium-high speed. Add 1 egg, beating just until incorporated. Repeat with remaining egg. Reduce mixer speed to low and add the flour mixture by thirds, alternating with the applesauce. Scrape down sides of bowl and increase mixer speed to medium. Quickly add 1/2 cup hot coffee, beating until thoroughly combined -- about 30 seconds. Fold in the raisins and walnuts. Bake the cake: Pour the batter into prepared pan and bake on middle rack of oven until tester inserted in the center comes out clean -- 40 to 45 minutes. Place cake in pan on a wire rack and cool until slightly warm. Gently run a knife around the edge of the pan, remove the cake, and cool completely. Make the glaze: Sift powdered sugar and remaining cocoa powder together. Make a well in the center and quickly pour in remaining hot coffee. Whisk until well blended and smooth. Pour over top of cake, allowing it to soak in. Serve immediately.
