3 tablespoons thick plain yoghurt
2 tablespoons finely chopped coriander (cilantro)
2 teaspoons lemon juice
3 tablespoons whole-egg mayonnaise
2 tablespoons Dijon mustard
wholegrain tomato sauce
3 tablespoons tomato sauce
2 tablespoons wholegrain mustard
4 pork sausages
4 chicken sausages
4 beef sausages
1 tablespoon olive oil
2 red onions, sliced
2 red apples, cored and thinly sliced
150 g (5½ oz) mixed lettuce leaves
12 pocket pitta breads, split at the top

Steps:

  • 1. First, prepare the dressings, which you can do a day ahead if you wish. Simply combine the ingredients for the yogurt and coriander dressing, mustard mayonnaise and wholegrain tomato sauce in separate small bowls. Cover and refrigerate until needed.

    2. Preheat a barbecue grill plate or flat plate to medium. Fry the sausages for about 10 minutes, or until cooked through, turning during cooking. Keep warm.

    3. Heat the oil on the barbecue flat plate. Cook the onion on one area of the hotplate and the apples on another for 5 minutes, or until they begin to soften and turn golden. Remove from the heat and set aside.

    4. Put some lettuce leaves in each pitta bread pocket. Slice the pork sausages in half lengthways and divide among 4 pitta pockets; add some barbecued onion and all the apple and drizzle with mustard mayonnaise. Slice the chicken sausages in half and divide among 4 pitta pockets; add some barbecued onion and drizzle with the yoghurt and coriander dressing. Slice the beef sausages and divide among the remaining pitta pockets; add the remaining onion and drizzle with the wholegrain tomato sauce. Wrap in colourful napkins and serve.
