3/4 c. dark corn syrup
1/2 c. dark brown sugar
3 tbsp. butter or margarine
1 tsp. vanilla extract
1 pinch salt
3 large eggs
1 1/2 c. Pecan halves
1 9-Inch Baked Pie Shell

Steps:

  • Prepare 9-Inch Baked Pie Shell as recipe directs. Cool pie shell on wire rack at least 10 minutes. Reset oven control to 350 degrees. In large bowl, with wire whisk, mix corn syrup, sugar, butter, vanilla, salt, and eggs until blended. With spoon, stir in pecans. Pour filling into pie shell. Bake 43 to 45 minutes or until filling is set around edge but center jiggles slightly. Cool on wire rack at least 3 hours for easier slicing. Refrigerate leftovers up to 1 week.

1 recipe Baked Pie Shell
1 3/4 c. Pecan halves
3/4 c. dark corn syrup
1/2 c. packed brown sugar
4 tbsp. butter or margarine
1 tsp. vanilla extract
3 large eggs

Steps:

  • Prepare Baked Pie Shell as recipe directs, but reduce baking time without pie weights to 10 to 12 minutes. Cool on wire rack. Preheat oven to 350 degrees F. Prepare Pecan Filling: Coarsely chop 1 cup pecans. In large bowl, with wire whisk, mix corn syrup, sugar, butter, vanilla, and eggs until blended. Stir in chopped pecans and remaining pecan halves. Pour pecan filling into cooled pie shell. Bake 45 to 50 minutes or until filling is set around edge but center jiggles slightly. Cool on wire rack at least 1 hour for easier slicing.

Gently press dough against bottom and up side of plate without stretching. Trim dough edge, keeping overhang intact. Transfer overhang to work surface. From overhang, with 3/4-inch decorative cookie cutter, cut 40 shapes, rerolling if necessary, for decorating rim of pie later. Refrigerate pie shell 15 minutes. Refrigerate cut shapes until ready to use. Line pie shell with foil or parchment and fill with pie weights, dried beans, or uncooked rice. Bake 12 to 14 minutes or until beginning to set. Remove foil with weights and bake 13 to 15 minutes longer or until golden. Meanwhile, in large bowl, with wire whisk, mix sugar, syrup, whole eggs, butter, bourbon, and salt until well blended. Place hot pie shell in 18- by 12-inch jelly-roll pan. Lightly brush rim of pie shell with egg white. Gently and carefully press cut shapes around rim. Spread pecans evenly in pie shell, then pour sugar mixture over them. Bake 35 minutes or until filling is golden brown, puffed, and set around edge, but center still jiggles slightly.
