It's hard not to love burgers. Some favour the Aussie burger-bar versions of yesteryear, stacked high with cheese, lettuce, tomato, bacon, eggs and barbecue sauce. If you've only ever tasted burger patties packed with eggs, breadcrumbs, herbs and all other whatnot, just try these and you'll be converted forever. Simple really is best.

500g cheap beef mince* 
2 tbsp dripping or vegetable oil
4 soft hamburger buns
sea salt and freshly ground black pepper, to season
1 brown onion, peeled, and shaved into very thin rings
4 slices cheddar or tasty cheese
½ cup sliced dill pickles, to serve
tomato sauce, to serve
American-style mustard, to serve

Steps:

  • Divide the minced beef into four equal portions and roll them into balls without pressing them together too much. Squash the balls and gently mould them into four "quarterpound" patties the same size as your burger buns. Chill the patties in the fridge for at least 10 minutes. 

    Heat a large frying pan or barbecue hotplate and brush it with a little dripping or oil. Cut the buns in half and place them, cut-side down, directly onto the hotplate. Season each patty well with salt and pepper, and place onto the hotplate alongside the buns. 

    Add a small amount of shaved onion to the raw top of the patty and squish it in. After a minute or so, flip it over. Add a slice of cheese to the cooked top of the patty and then cover it with the top of a bun. Cook the patty for a further minute or two until the cheese is melted. Flip the bun bottom and cover with the cheese and bun-covered patty. Serve with pickles and condiments.

    *Adam's tip Cheaper beef minces are higher in fat than the more expensive "premium" minces, which makes them great for hamburgers. While burger experts recommend 30 per cent fat for hamburgers, the 15-20 per cent fat you get in cheap minces is perfectly fine.

20g unsalted butter
1 banana shallot, finely chopped
500g 12% fat beef mince
40g fresh breadcrumbs
1 egg yolk
2 tsp English mustard
½ tsp cracked black pepper
8 thin slices of smoked pancetta
2 tbsp vegetable oil
4 brioche burger buns
4 tbsp cranberry sauce
chicory or salad leaves, to serve
80g crumbled blue cheese (stilton works well)
1 tbsp mayonnaise
2 tbsp soured cream

Steps:

  • Melt the butter in a frying pan over a medium heat until foaming, then fry the shallots with a pinch of salt for 10 mins until softened and translucent. Set aside to cool.
  • Tip the beef mince into a large bowl, then add the cooled shallots, the breadcrumbs, egg yolk, mustard, pepper and 1 tsp salt. Squish the mixture together using your hands until well-combined. Divide into four equal portions, weighing for accuracy, if you like, then form these into four burger patties. Keep covered in the fridge. Will keep chilled for up to 48 hrs.
  • Heat the grill to medium. Arrange the pancetta on a baking tray and grill for 3-4 mins until crisp.
  • Meanwhile, for the blue cheese sauce, combine the cheese, mayo and soured cream together in a bowl. Season to taste and set aside.
  • Remove the pancetta from the grill and heat the oven to 220C/200C fan/gas 7. Heat the oil in a large frying pan over a medium heat and cook the burgers for 3 mins on each side until browned. Transfer to a baking tray and finish cooking in the oven for 10-12 mins until cooked through. Cover and leave the burgers to rest for 5 mins.
  • Toast the cut sides of the buns in a dry frying pan. Spread the bases with the cranberry sauce, lay the patties on top, add the blue cheese sauce, salad leaves and pancetta, then finish with the bun tops.

    3. Flip the burger, then, after 2 minutes, crumble the blue cheese next to it to melt. Move the burger on top of the oozy cheese, jiggle around to coat, then put it on your bun base.
    4. Stack in as much pear and salad as the bun will hold, pop the lid on, squash and devour, with any extra salad on the side.
