While we were cooking these potatoes, we thought there was too much oil. But, once the potatoes are softened they absorb all the flavor from the butter and oil and caramelize beautifully. This is an old-fashioned recipe that reminds us of cooking in the kitchen with Grandma. They're almost like hash browns but without shredding or dicing the potatoes. Once fried, the potatoes are a little crisp outside and soft inside. Onions add tons of flavor. A delicious side dish you could serve at breakfast or dinner.

2 pound(s) yukon gold potatoes (4 medium) scrubbed, partially cooked and sliced thinly or diced into 1/2-inch cubes
1/4 cup(s) olive oil
3 - 4 tablespoon(s) unsalted butter
1 large onion, yellow or vidalia
- salt and pepper, to taste

Steps:

  • Melt the butter with the oil in a large skillet over medium-high heat.
  • Add the potatoes and spread them evenly in the pan. Cook undisturbed until the potatoes are golden brown on one side, about 5 minutes.
  • Carefully turn the potatoes to ensure even browning and add the onion to the skillet.
  • Continue cooking, turning the potato and onion mixture every few minutes, until the potatoes are well browned and the onion is softened and caramelizing, 10 to 15 minutes longer. Season with salt and pepper to taste and serve immediately.

50g butter
2 onions, chopped
4 carrots, diced
1 head of celery, chopped
4 garlic cloves, finely chopped
200g pack chestnut mushrooms, sliced
2 bay leaves
1 tbsp dried thyme
500g pack dried green lentils (we used Merchant Gourmet Puy lentils)
100ml red wine (optional)
1.7L vegetable stock
3 tbsp tomato purée
2kg floury potato, such as King Edwards
85g butter
100ml milk
50g cheddar, grated

Steps:

  • To make the sauce, heat 50g butter in a pan, then gently fry 2 chopped onions, 4 diced carrots, 1 chopped head of celery and 4 finely chopped garlic cloves for 15 mins until soft and golden.
  • Turn up the heat, add 200g sliced chestnut mushrooms, then cook for 4 mins more.
  • Stir in 2 bay leaves and 1 tbsp dried thyme, then add 500g green lentils. Pour over 100ml red wine and 1.7l vegetable stock – it’s important that you do not season with salt at this stage.
  • Simmer for 40-50 mins until the lentils are very soft.
  • Season to taste, take off heat, then stir in 3 tbsp tomato purée.
  • While the lentils are cooking, tip 2kg floury potatoes into a pan of water, then boil for about 15 mins until tender. Drain well, mash with 85g butter and 100ml milk, then season with salt and pepper.
  • To assemble the pies, divide the lentil mixture between all the dishes that you are using, then top with mash.
  • Scatter over 50g grated cheddar and freeze for up to two months or if eating that day, heat oven to 190C/fan 170C/gas 5, then bake for 30 mins until the topping is golden.

    1. Put all the minced meat into your largest pan on a high heat with a good lug of oil and a pinch of sea salt and pepper. Cook for 20 minutes, or until golden, stirring regularly.
    2. Meanwhile, peel and finely chop the garlic, onions, carrots and celery. When the mince has got a good colour, add all the chopped veg and cook for a further 10 minutes, then add the Chianti and cook it away.
    3. Pour in the tomatoes, breaking them up with a spoon, and add half a tin’s worth of water. Bring to the boil, then simmer gently for 1 hour, or until the meat is tender and the sauce is super-thick. Remove from the heat to cool, then finely grate and stir in the Parmesan.
    4. Now it’s time to assemble your pasta. Following the instructions for making the pasta dough, roll out your dough to 1mm thick, then make your ravioli about 7cm square. I work with a quarter of the pasta at a time to give more control.
    5. Use a heaped teaspoon of filling in the centre of each one, sealing the edges with a light brushing of water and pushing out the air – you should get about 50 to 60 ravioli from this amount of pasta. Place them on a semolina-dusted tray as you go.
    6. Freeze the remaining Bolognese (you’ll have roughly half left) for a rainy day, or make a double batch of pasta and freeze as ravioli – you can cook them from frozen in the sauce.
    7. Put a pan of salted water on to boil for the pasta.
    8. For the sauce, peel and roughly chop the garlic and deseed and finely chop the chillies. Place a pan on a medium heat, add a lug of oil and the garlic and chilli, and fry for a few minutes, or until very lightly golden. Add the tomatoes and simmer for 10 minutes, or until thickened and reduced, then remove from the heat and blitz until smooth with a stick blender. Taste and season to perfection, then place back on a very low heat.
    9. Cook the ravioli in the boiling salted water for 3 minutes, or until tender, then use a slotted spoon to transfer them to the sauce. Gently toss together and simmer for another couple of minutes, then divide between warm bowls, scatter with baby basil leaves and serve with a few extra gratings of Parmesan, if you like.
