Golden Fried Dumplings recipe - Simple Chinese Food image

This gold medal fried dumpling was seen on the TV program and kept in the small notebook. Today I finally have time to make one. We sell the ingredients here, and we often put water chestnuts in our local dumplings. It is made into stuffing. This dumpling has several characteristics: first, it uses pumpkin to make the noodles, the dough is soft and firm, the second is rich in fillings, not greasy at all, and third, it is steamed and then fried, and it is deliciously burnt. Having said so much, I just want to express that it's really delicious. It's worthy of the name Golden Fried Dumplings!

250 grams Flour
120 grams (cooked) Pumpkin puree
200 g Pork filling
120g Chives
90g Water chestnuts
60 grams Fresh shiitake mushrooms
60 grams Soaked black fungus
Right amount Soy sauce
Right amount salt
Right amount Chicken Essence
1 tsp sesame oil
1 tsp black pepper powder
Right amount ginger

Steps:

  • Prepare the minced meat ingredients, wash and set aside
  • Soak all the shiitake mushrooms and black fungus in the auxiliary ingredients and cut them into small cubes. Cut the water chestnuts into small cubes and pour them into the meat filling.
  • Then add minced chives
  • Finally add the sesame oil, and all the spices
  • Mix well and the meat filling is ready
  • Let’s make dumpling skins. Peel the old pumpkin and cut into thin pieces.
  • Put it in the steamer and steam for about 20 minutes
  • Let the steamed pumpkin puree cool and pour it into the flour
  • Mix into a smooth dough, then cover with plastic wrap and let it go for 15 minutes
  • Roll the dough into long strips
  • Divide evenly into small portions
  • Roll each portion into a round crust, then take one in the middle and put it in the meat
  • Wrap it up, do everything like this
  • After wrapping, put it in a steamer and steam for about 7 minutes
  • The appearance after steaming
  • Put a little oil in the pot to heat up
  • Put the steamed dumplings in and fry them over medium and small fire
  • Fry it until the bottom is browned.

1 1/2 kg chicken
1 piece gingerroot, size of small walnut
1 spring onion
1 cup water
1 cup light soy sauce
3 tablespoons dark soy sauce
1 tablespoon shaoxing wine or 1 tablespoon dry sherry
1 tablespoon hoisin sauce
1 tablespoon honey
1 teaspoon sesame oil
2 whole star anise
1 bay leaf
2 teaspoons brown sugar

Steps:

  • Wash chicken well and pat dry with paper towels.
  • Place ginger and spring onion in the cavity of the chicken.
  • Bring the sauce ingredients to the boil in a saucepan large enough to hold the chicken. Make sure honey and sugar dissolve completely.
  • Place the chicken in the saucepan with the sauce. Bring back to the boil, basting the sauce over the chicken, then reduce heat to a low simmer.
  • Simmer the chicken for 15 minutes; the sauce should be just bubbling. Turn the chicken over to cook for another 15 minutes, then return the chicken to its back again for a final 25-30 minutes of low simmering.
  • The chicken is cooked when the flesh on the drumstick has shrunk back from the bone.
  • Remove the chicken to cool to room temperatures, then chop into pieces, chinese style, for serving.
  • To serve, spoon about 3 tablespoons of the reheated sauce over the chicken and garnish attractively with fresh spring onion curls.
