Smoked salmon and sweet potato cakes recipe | Australia… image

These delicate fish cakes are gluten-free. We've used polenta for coating however you could also use quinoa flakes or chia seeds. Serve with edamame & lime.

650 grams orange sweet potatoes, peeled, coarsely chopped
300 grams hot-smoked salmon
⅓ cup (80ml) extra virgin olive oil
1 teaspoon cumin seeds
1 teaspoon coriander seeds, crushed
½ teaspoon dried chilli flakes
2 green onions, chopped finely
½ cup (90g) fine polenta
1 cup (250ml) Greek yoghurt

Steps:

  • Place sweet potato in a steamer basket over a saucepan of simmering water. Steam, covered for 20 minutes or until very tender. Place in a large bowl; mash.
  • Remove and discard skin and bones from salmon, then flake flesh into large chunks.
  • Heat 2 tablespoons of the oil in a small saucepan over medium heat. Add cumin and coriander seeds, and chilli flakes; cook, stirring, for 1 minute or until fragrant. Reserve.
  • Add salmon, green onion, half the polenta and half the spiced oil to sweet potato; season. Mix well to combine. Divide mixture into 12 portions; shape into patties. Refrigerate for 30 minutes or for several hours. Coat patties in remaining polenta.
  • Heat the remaining oil in a large frying pan over medium heat. Cook patties, in two batches, for 2 minutes each side or until golden and heated through.
  • Place the yoghurt in a small bowl; swirl through remaining spiced oil. Serve cakes with spiced yoghurt.

1 medium potato
1 tablespoon olive oil
1/8 teaspoon pepper
1/8 teaspoon salt
FISH:
3 tablespoons all-purpose flour
1/8 teaspoon pepper
1 large egg
2 tablespoons water
1/3 cup crushed cornflakes
1-1/2 teaspoons grated Parmesan cheese
Dash cayenne pepper
1/8 teaspoon salt
1/2 pound haddock or cod fillets
Tartar sauce, optional

Steps:

  • Preheat air fryer to 400°. Peel and cut potato lengthwise into 1/2-in.-thick slices; cut slices into 1/2-in.-thick sticks., In a large bowl, toss potato with oil, pepper and salt. Place potato pieces in a single layer in air-fryer basket; cook until just tender, 5-10 minutes Toss potatoes in basket to redistribute; continue to cook until lightly browned and crisp, 5-10 minutes longer. , Meanwhile, in a shallow bowl, mix flour and pepper. In another shallow bowl, whisk egg with water. In a third bowl, toss cornflakes with cheese and cayenne. Sprinkle fish with salt; dip into flour mixture to coat both sides and shake off excess. Dip in egg mixture, then in cornflake mixture, patting to help coating adhere. , Remove fries from basket; keep warm. Place fish in a single layer in air-fryer basket. Cook until fish is lightly browned and just beginning to flake easily with a fork, turning halfway through cooking, 8-10 minutes. Do not overcook. Return fries to basket to heat through. Serve immediately. If desired, serve with tartar sauce.
