8 ounces enoki mushrooms
1 teaspoon sesame oil
1 large clove garlic, finely chopped
1 teaspoon low-sodium soy sauce (such as Bragg®)
½ teaspoon finely grated fresh ginger

Steps:

  • Cut the bottom 2 inches off the mushrooms and discard. Separate the mushroom strands gently.
  • Heat oil in a medium-sized nonstick skillet over medium heat. Add garlic and cook until just fragrant, about 1 minute. Add mushrooms and stir-fry until they begin to wilt, about 2 minutes. Add soy sauce and ginger; toss to coat. Cook 1 to 2 minutes more.

Number Of Ingredients 13

2 Tbs peanut oil
2 chicken breast fillets thinly sliced
1 red chilli Thai variety, sliced
1 tsp fresh ginger grated
1 garlic cloves, sliced
2 pak choy
1 cup broccoli or green beans, sliced
3/4 cup enoki mushrooms
mushrooms exotic mix, sliced
1 spring onions
finely sliced
6 papaya sliced
soy sauce

Steps:

  • In a medium-large sized pan or wok on medium-high heat, add the peanut oil, chicken and red chilli. fry stirring for a minute or two.Add ginger, garlic and broccoli and stir around for 2 -3 minutes.Add soy sauce and stir through. Turn the heat down to medium and add the bok choi and enoki mushrooms. Cook for less than a minute, stirring. The chicken should be cooked through by now. Toss in the spring onions and remove from heat.Toss into a serving bowl and add slices of papaya.  Serve with more soy sauce and extra sliced red chilli if desired.* Prepare enoki by slicing 2cm off base and dividing into small bundles or pulling each thread separate.Reprinted with permission of The Food and the Fabulous.
