GLUTINOUS RICE BALL DESSERT RECIPE - FOOD.COM

Glutinous Rice Ball Dessert Recipe - Food.com image

This was my favorite dessert growing up. My mom is an amazing cook and she use to make many popular vietnamese desserts. It is different from the original since I don't like the yellow bean paste that typically goes inside these golf size balls. It can be replaced with peanuts, red bean paste, sesame paste etc, however, I prefer it just plain. The beauty of this easy recipe is that you can alter the sugar soup however you like (I've added fresh squeezed orange juice for citrus or traditionally served with toasted chopped peanuts & sesame seeds and some coconut milk)

Total Time 25 minutes

Prep Time 10 minutes

Cook Time 15 minutes

Yield 4 Small bowls, 2-4 serving(s)

Number Of Ingredients 8

1 cup glutinous flour
1/3 cup water (or more, if needed)
1/3 cup brown sugar
2 slices fresh gingerroot
icy cold water
toasted and chopped peanuts
toasted sesame seeds
coconut milk

Steps:

  • Put flour and water in a bowl and mix with a spoon (since the flour is so fine it doesn't need to be whisked). The texture should not be sticky, add more flour if it is. If too dry, you won't be able to roll them in quarter sized balls (they will break apart). My mother never measured anything, it was always about texture.
  • Boil a pot of water (2/3 full).
  • Roll the dough in quarter sized balls and drop them into the boiling water (the dough can be rolled into any shape - footballs, worms, squares etc). When they float remove them with a slotted spoon and put into a separate bowl with ice water. Once done, set aside.
  • In a smaller pot, add water (1/2 full), add brown sugar and slices of ginger. Allow to boil and then turn down to simmer. Use slotted spoon to pick up all cooked rice balls and drop them into the sugar/ginger soup. Allow balls to soak in soup for 20-30 minutes.
  • Pour into bowls and serve. Enjoy!

Tang Yuan is a Chinese dessert symbolising harmony and reunion that is popularly eaten during “Yuan Xiao” (last day of Chinese New Year), “Dong Zhi” (winter solstice) as well as auspicious and important family celebrations. These little glutinous rice balls can be found with varying flavours of paste filling. Tip: If the dough is too dry, add a bit more water. If the dough is too wet, add a bit more flour. If the dough feels dry when shaping the balls, dip your fingers in water before continuing.

  • To Make the Glutinous Ball In a large mixing bowl, add flour and sugar. Gradually add water (you don’t have to use all of it) and knead the dough until soft and smooth. It should be bouncy and easily kneadable, yet not too wet (sticky to the fingers), nor too dry (crumbling). Divide the dough depending on the number of different colours you intend to make. Add food colouring, one drop at a time, to each portion and knead until the colour is well distributed. Shape the dough to even-sized balls. Bring a pot of water (enough water to submerge the glutinous ball completely) to boil. Add the tang yuan into the boiling water and cook until they float to the surface. Transfer them immediately to a bowl of room temperature water until cooled or ready to serve. To Cook the Ginger Sweet Soup To cook the ginger sweet soup, add all the ingredients – ginger, water, palm sugar and pandan to a pot. Bring to a boil and reduce heat to a simmer until the sugar is fully melted. Simmer for another 30 mins. To serve, add tang yuan to a serving bowl and ladle the sweet soup over.
