Prize-Winning Gluten-Free Sponge Cake Recipe - Food.co… image

Taken from Jo Seagar's "It's Easier Than You Think" cookbook. Make sure the corn flour (corn starch) isn't wheaten. Also check the icing sugar is made from pure sugar, and doesn't contain cornstarch or gluten.

Number Of Ingredients 12

1 cup sugar
3 tablespoons water
4 eggs, separated
1/2 teaspoon vanilla
1 1/2 cups cornflour, make sure it is gluten-free (cornstarch)
1 teaspoon baking powder, gluten-free
1/2 teaspoon salt
1 1/4 cups whipping cream
1/2 teaspoon vanilla
1/4 cup strawberry jam, warmed
250 g strawberries, thinly sliced
1 tablespoon icing sugar

Steps:

  • Preheat oven to 180C (350F). Coat 2 spring form pans with baking spray, then line with baking paper. The baking spray helps keep the paper from moving around.
  • In a microwave bowl or small saucepan, place the sugar and water. Bring to a boil. Stir every now and then to dissolve the sugar.
  • Beat the egg whites with an electric mixer until stiff. Slowly drizzle in the hot sugar mixture with the mixer running. Then beat really hard for 3 minutes. Mix in egg yolks and vanilla.
  • Sift together cornstarch, baking powder and salt. Carefully fold these into the egg mixture. Pour into prepared pans.
  • Bake 18-20 minutes. As soon as you remove them from the oven, drop the pans from knee height, square on the floor - seriously! This is a strange sponge making trick that 'shocks' the cake and stops it from deflating.
  • Then immediatly turn sponges out onto a wire rack or baking paper to cool upside down.
  • Beat cream and vanilla until soft peaks form. Warm jam for a few seconds in the microwave.
  • Place one sponge on the serving plate. Spread first with jam, then whipped cream.Top with strawberry slices. Then put second sponge on top. Dust with icing .

Whether you’re gluten intolerant or not, this delicious gluten-free chocolate cake with scrumptious buttercream icing and a hit of fresh raspberries is a real winner!

300 g unsalted butter plus extra for greasing
300 g gluten-free plain flour plus extra for dusting
300 g golden caster sugar
4 large free-range eggs
1 teaspoon vanilla extract
1 teaspoon gluten-free baking powder
¼ teaspoon xanthan gum
6 tablespoons cocoa powder
3 tablespoons milk
200 g icing sugar
4 tablespoons cocoa powder
100 g unsalted butter
100 g cream cheese
70 g fresh raspberries
quality dark chocolate (75% cocoa solids) to serve

Steps:

    1. Before you start, remove the butter from the fridge and allow to come up to room temperature.
    2. Preheat the oven to 190ºC/375ºF/gas 5. Grease two springform cake tins (roughly 20cm) with butter, then line the bottom with greaseproof paper and dust the sides with gluten-free flour.
    3. In a bowl, beat the butter and sugar for around 5 minutes, or until light and fluffy. Crack in the eggs, then mix in the vanilla extract until combined. Sieve the flour, baking powder, xanthan gum and cocoa powder into the bowl, then fold through. Add the milk and stir briefly until you have a nice, smooth batter.
    4. Carefully divide the mixture between the cake tins, then place on the middle shelf of the hot oven for 15 to 20 minutes, or until an inserted skewer comes out clean. Leave to cool for 5 minutes, before turning the cakes out onto a wire cooling rack, then leave to cool completely while you make the icing.
    5. Sieve the icing sugar and cocoa powder into a large bowl, then add the butter and beat until smooth. Stir in the cream cheese until combined. If it’s a little thick, add a splash of milk to loosen.
    6. Once cooled, place one of the sponges on a plate or cake stand. Carefully spread over half the butter icing. In a bowl, crush the raspberries with a fork, then scatter on top. Sandwich the second sponge on top and press down slightly, then carefully spread over the remaining icing and finish with a few shavings of chocolate.

  • Cocoa Swiss Roll Sponge Pre-heat the oven. Rub some butter around the inside of a 23 x 33cm/9 x 13” baking tray or insert a baking liner. Put the cocoa and water into a bowl, mix until smooth then set aside. Break the eggs (or chickpea flour + water + baking powder) into another large bowl and beat really well. Add the caster sugar and beat for two minutes. Sieve the flour into the bowl and beat for another two minutes. Add the prepared cocoa mixture and beat for a further minute. Tip the mixture into the prepared baking tray and spread it out to the edges. Bake for 13-15 minutes. Remove from the oven and leave the cake in the tray for two minutes then gently tip it out onto a tea towel. With the tea towel, gently roll the sponge up from the short end and leave to cool. Vanilla Buttercream Filling Sieve the icing sugar into a bowl, add the softened butter and vanilla extract. Beat together until smooth. Gently unroll the cold sponge, spread the buttercream evenly over the top, then roll the sponge up quite tightly from the short end, making sure the filling stays inside. You can use the tea towel to help with this. Chocolate Log Topping Put the cream into a saucepan, bring it to the boil then remove it from the heat and add the chocolate. Stir until smooth. Cool the mixture for a few minutes, stirring occasionally as it thickens. Spread the topping over the cake. Drag the prongs of a fork length ways through the topping to create a log-like texture. Chill until set. Sieve a little icing sugar over the cake before serving.

    1. Preheat the oven to 190°C/375°F/gas 5. Grease two 20cm sandwich tins and line the bases with greaseproof paper circles, then dust lightly with flour.
    2. Beat the butter and sugar together until very light and fluffy.
    3. Add the eggs one by one, making sure you beat each one in well before you add the next, then finely grate the orange zest and fold with the flour.
    4. Divide the cake mix between the prepared tins. Spread it out well with a spatula and bake for 20 to 25 minutes, or until golden, risen and an inserted skewer comes out clean.
    5. Allow to cool in the tins, then carefully turn out onto a wire rack to cool completely.
    6. Mix a few drops of rosewater into the jam, but don’t go crazy with it – it’s very strong!
    7. For the crystallized petals, turn the oven right down to 110°C/225°F/gas 1. Whisk the egg white to stiff peaks. Use a pastry brush to coat the rose petals on both sides with a very thin layer of the egg white, then sprinkle over some caster sugar.
    8. Shake off the excess sugar and lay the petals on a baking tray lined with greaseproof paper. Bake for 3 to 4 minutes in the oven, or until the petals are firm to the touch.
    9. For the vanilla cream, split the vanilla pod lengthways and scrape out the seeds, then whip the cream with the vanilla seeds and sugar until you get soft peaks.
    10. Spread the jam and then the vanilla cream over one of the cakes and scatter the raspberries on top. Place the second cake on top.
    11. Dust with icing sugar and decorate with the crystallized rose petals. Serve on a beautiful cake stand to really show off your creation, and enjoy.
