If you've ever wanted a recipe for gluten free cookie dough you're going to love this sweet, creamy edible gluten free cookie dough recipe. It uses minimal ingredients and we've included an option for making it dairy-free.

Number Of Ingredients 6

10 tablespoons salted butter (this is one 1/2 cup stick of butter plus 2 Tbsp, you can also use 1 stick plus 2 Tbsp of water instead)
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup gluten free all purpose flour (I used my blend or Bob's Red Mill 1-to-1)
3/4 cup chocolate chips

Steps:

  • Add the butter, sugars, and vanilla to a large mixing bowl.
  • Mix until combined and smooth.
  • Add in the gluten free flour.
  • Mix until well incorporated.
  • Add in the chocolate chips.
  • Mix until evenly incorporated.
  • Store in an airtight container in the refrigerator or freezer.

These cookies are great to make ahead and have on hand for cookie emergencies. A simple slice and bake cookie that keeps well in the refrigerator or freezer.

Number Of Ingredients 7

1?½ cups white sugar
1 cup butter
1 egg
1 teaspoon vanilla extract
2?½ cups all-purpose flour
1?½ teaspoons baking powder
½ teaspoon salt

Steps:

  • In a medium bowl cream together the sugar and butter until smooth. Stir in the egg and vanilla. Combine the flour, baking powder and salt, gradually stir into the creamed mixture until all flour is absorbed. Shape dough into rolls about 1 1/2 inches in diameter. Wrap in waxed paper; refrigerate until firm, at least 4 hours or up to 1 week.
  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. Unwrap chilled rolls and cut into 1/4 inch thick slices. Place cookies 1 inch apart onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, until cookies are lightly browned. Remove from baking sheets immediately to cool on wire racks.
