1 cup Land O Lakes® Butter softened
1 cup firmly packed brown sugar
1/2 cup sugar
2 large Land O Lakes® Eggs
1 teaspoon gluten-free vanilla
2 1/4 cups Gluten-Free Flour Blend (see below)
1 teaspoon baking soda
1/2 teaspoon salt
1 (12-ounce) package (2 cups) gluten-free semi-sweet chocolate chips
1 cup chopped gluten-free pretzels

Steps:

  • Heat oven to 375°F.
  • Combine butter, brown sugar and sugar in bowl. Beat at medium speed until creamy. Add eggs and vanilla; continue beating, scraping bowl occasionally, until well mixed. Add gluten-free flour blend, baking soda and salt; beat at low speed until well mixed. Stir in chocolate chips and pretzels.
  • Drop dough by rounded teaspoonfuls onto ungreased cookie sheets. Bake 8-10 minutes or until lightly browned around edges. Let cool 1 minute on cookie sheets. Remove to cooling rack.

2 1/4 cups all-purpose gluten free flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, packed
2 eggs
1 teaspoon pure vanilla extract
2 cups semisweet chocolate chips
1 cup gluten-free pretzel twists

Steps:

  • Preheat oven to 375°F. Combine flour, baking soda and salt in a medium bowl. Stir together to combine. In the bowl of a stand mixer, cream together butter and sugars. Add eggs and vanilla extract, mixing again until combined. Add the dry ingredients to the wet, mixing on low until a dough forms. Fold in the chocolate chips and pretzels by hand. Drop dough in tablespoon size on an ungreased cookie sheet about 2 inches apart. Bake for 10-12 minutes. Remove cookies and move to wire rack to cool.
