- Combine flour, xanthan gum, guar gum, and salt in the bowl of a stand mixer fitted with the paddle attachment; mix well. Make a well in the center; add egg yolks and egg and mix on medium speed until well combined, about 2 minutes. Add oil and water, 1 tablespoon at a time; mix well.
- Switch to the hook attachment; knead on medium speed until dough comes together, about 3 minutes. Place dough in a greased bowl; cover and let stand for 20 minutes.
- Divide dough into 4 equal parts. Roll each piece over a floured surface and make pasta strips of desired width using a pasta machine or a sharp knife.

- In a large bowl, whisk together gluten-free flour, xanthan gum, and salt. Make a large well in the center of your flour mixture and add eggs. Using a fork, beat eggs until mixed, then slowly integrate flour into eggs until no dry flour is left and a ball of dough has formed. (You may have to switch from a fork to your hands near the end of the mixing process.) Turn dough out onto a lightly floured surface and knead until smooth, 2 to 3 minutes. Cut dough into quarters and wrap all but one in plastic wrap. On a lightly floured surface, roll uncovered dough into a long rectangle about 1/4” thick. Set pasta maker to widest setting and pass the rolled out dough through 2 times. Fold the short ends of the dough to meet in the center of the rectangle, then fold in half so that the dough is in quarters. Roll out again to the dough is 1/4” thick, then pass through pasta maker 2 more times. Adjust pasta maker to be 1 degree more narrow and repeat process. Continue rolling, folding, and adjusting until desired thickness is reached. Dough should be slightly translucent. Place rolled out dough onto a lightly floured surface and dust with more flour. Repeat process with remaining dough quarters. Adjust pasta maker to desired width of noodles and feed dough through machine. Divide noodles into equally sized portions and curl into nests. Place on a parchment lined baking sheet and cover with a clean kitchen towel until ready to cook. To cook: bring a large pot of salted water to a boil and add pasta. Boil, stirring gently with a wooden spoon, until tender, 2 to 3 minutes. Drain and serve with your favorite pasta sauce.

- Place the ingredients in a food processor and blitz to a rough dough. Tip out onto a flour-dusted surface and knead for 3 to 5 minutes, or until smooth.
- Cut the dough into four pieces, then carefully press a portion out flat with your fingertips and start to roll it out using a pasta machine. Start at the widest setting and roll the dough through it, lightly dusting with the rice flour if it sticks. Roll the pasta through the widest setting a second time, then click the machine down a setting and roll the dough through again.
- Now, start clicking the settings down, rolling the pasta through each setting twice – gluten-free pasta isn’t as elastic as standard pasta, so make sure you avoid using the two narrowest settings, otherwise it may rip. Once you have a thin sheet of pasta (about 2mm thick), set aside on a flour-dusted surface and cover with a damp tea towel to avoid it drying out, then continue with the remaining dough.
- Now’s the time to transform your dough into whichever variety of pasta you like. If you want to make tagliatelle, roll the pasta through the tagliatelle setting on your pasta machine, or use a sharp knife to slice the pasta sheets lengthways into long strips (roughly 7mm thick), placing on a flour-dusted tray as you go. To cook, place in a pan of boiling salted water for around 3 minutes, or until al dente, then serve how you like it.
