This low carb keto general tso chicken is a classic Chinese takeout dish that is way better than any restaurant for a perfect weeknight dinner, made with tender chicken and a spicy-sweet sauce served over steamed broccoli or cauliflower rice.

2 tablespoons coconut aminos
1 teaspoon swerve sweetener
1 tablespoon fish sauce
1 tablespoon ketchup, Stevia Sweetened
2 chicken breasts, skinless, boneless (or thighs), cut into ½-inch cubes
1 tablespoon peanut oil
1/4 teaspoon red pepper chili flakes
1 clove garlic, minced
1 tablespoon rice wine vinegar
1 tablespoon xanthan gum
Kosher salt
1/4 tsp white pepper
4 scallions, chopped
Toasted sesame seeds

Steps:

  • Take a bowl, add all the sauce ingredients and mix well until well combined. Set aside.
  • In a medium bowl, season chicken breast pieces with salt and pepper. Set aside.
  • Heat a large skillet or wok over high heat, add the peanut oil.
  • Once hot, add minced garlic and red pepper flakes and stir for a few seconds.
  • Add the chicken pieces and stir fry for a couple of minutes.
  • Add the rice wine vinegar and cook for another 2-3 minutes.
  • Pour in the sauce and combine well. Bring it to a boil, reduce the heat, add xanthan gum and simmer for few minutes or until chicken is no longer pink and fully cooked and the sauce slightly thickens.
  • Transfer to a plate and serve hot. Top with toasted sesame seeds and scallions and serve on a side of broccoli or any of your favorite low carb veggies.

Our meatless version of that favorite Chinese restaurant dish, General Tso’s Chicken, starts with seasoned panko-coated cauliflower cooked crisp and golden brown in an air fryer. Tossed with a homemade General Tso’s Sauce, you won’t ever have to order takeout again when you have that craving for Asian flavors.

Cauliflower
2 eggs
2 tbsps water
1 1/2 cups unseasoned panko bread crumbs
1 1/4 tsps ginger ground
1 tsp garlic powder
3/4 tsp salt
1 tbsp flour
8 cups cauliflower florets cut into bite-size pieces
General Tso's Sauce
1 1/4 cups water
1/3 cup hoisin sauce
2 tbsps soy sauce
1 tbsp sugar
3 tbsps white vinegar
5 tsps corn starch
1 tsp garlic powder
1 tsp ginger ground
1/4 tsp red pepper crushed

Steps:

  • For the Cauliflower, whisk eggs and water in small bowl. Mix panko, ginger, garlic, salt and flour in shallow dish. Dip cauliflower in egg mixture, shaking to remove excess liquid. Transfer cauliflower to panko mixture; toss to coat well. Discard any remaining egg and panko mixtures.
  • Spray air fryer basket with no stick cooking spray. Working in batches, place cauliflower in basket; do not overcrowd. Spray cauliflower with no stick cooking spray. Air fry 10 minutes at 350°F, gently shaking basket or tossing cauliflower halfway through cooking. Repeat with remaining cauliflower.
  • Meanwhile, for the General Tso’s Sauce, whisk water, hoisin, soy sauce and sugar in a small saucepan on medium-high heat; bring to boil. Whisk vinegar, cornstarch, garlic, ginger and crushed red pepper in small bowl. Add vinegar mixture to saucepan; return to a boil. Cook until thickened, about 1 minute. Toss cauliflower with sauce before serving.
  • Oven Method: Prepare cauliflower as directed. Bake on foil-lined shallow baking pan in preheated 450°F oven 18 to 20 minutes or until lightly browned and crispy. Toss with sauce before serving.
  • Test Kitchen Tip: Air fryer cooking temperatures vary; adjust temperature and time as needed.

Whisk together remaining 2 teaspoons cornstarch with broth, soy sauce, ketchup, sugar, and rice vinegar. Heat canola oil and chiles in a large skillet over medium heat. When gently sizzling, add the ginger and garlic; cook until fragrant, about 30 seconds. Re-whisk cornstarch mixture; stir into mixture in skillet. Increase heat to medium-high. When sauce begins to bubble, add chicken. Stir to coat; cook until sauce thickens and nicely clings to chicken, about 1 1/2 minutes. Turn off heat; stir in 1 tablespoon green onion and sesame oil. Transfer to a serving plate, and top with sesame seeds and remaining 1 tablespoon green onion.
