Quinoa takes the place of traditional bulgur in this flavorful salad. It can stand alone as a vegetarian main dish, thanks to quinoa's protein content, or be served as a side dish or sandwich filling.

1 cup cooked quinoa
1 cup finely chopped fresh flat-leaf parsley
5 green onions, finely chopped
2 cups small grape tomatoes, halved
1 cucumber, peeled and seeded, thinly sliced
1 lemon, juice of
1/3 cup extra-virgin olive oil
1/4 teaspoon fine sea salt
1/8 teaspoon ground black pepper
Crushed red Chile flakes, optional

Steps:

  • Combine all ingredients together in a large serving bowl. 
  • Taste and adjust seasoning with salt, pepper and lemon juice. Serve room temperature or chilled.

1 cup dry gluten-free brown rice couscous
3 Tbsp. hummus
1 Tbsp. Almond Breeze Unsweetened Almond Milk
1 cup dairy-free vegan cheese such as GO Veggie! Vegan Cheese
2 large organic eggs
1 tsp. organic taco seasoning
1/4 tsp. sea salt
1/4 tsp. pepper

Steps:

  • Cook rice couscous according to package directions. Remove from heat; set aside to cool for 5 minutes.
  • Preheat oven to 350 degrees F.
  • Prepare a baking dish with nonstick baking spray.
  • In a large bowl, combine couscous with hummus, almond milk, cheese, eggs, taco seasoning, sea salt and pepper; mix well to combine.
  • Transfer to the prepared baking dish.
  • Bake for 25 minutes.
  • Remove from oven; set aside to cool for 5 minutes.
  • Serve warm.
