Gluten-Free Apple Muffins image

Gluten-Free Apple Muffins are a delicious, fun, flavorful gluten-free apple muffin that everyone in your house will love.

Number Of Ingredients 11

1 large egg, room temperature
2/3 cup sugar
1/3 cup oil of choice
1/2 cup applesauce
1 cup all-purpose gluten-free flour blend
1/2 teaspoon gluten-free baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 medium apple, cored, unpeeled, and grated (I used a gala)

Steps:

  • Preheat oven to 350°F (180°C). Line a cupcake pan with 10 - 12 paper liners; set aside.
  • In a large mixing bowl, whisk egg, sugar, oil, applesauce until combined.
  • Add in the flour, baking powder, and baking soda, cinnamon, nutmeg and cloves and continue to whisk until combined.
  • Fold in shredded apple.
  • Scoop batter (about 1/4 cup) into your paper liners.
  • Bake for 22-27 minutes or until the center is set.
  • Remove from the oven and cool completely before serving.
  • Store in an airtight container in the refrigerator for up to 4 days.

2 cups almond flour
1 teaspoon baking soda
4 eggs
1 cup unsweetened apple sauce
4 tablespoons melted butter
1 tablespoon pure vanilla extract
1 tablespoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 350º. In a large mixing bowl, thoroughly combine all of the ingredients. Pour the batter equally into a paper-lined muffin tin. They should be approximately three-fourths full.
  • Bake for 15 minutes, rotating the pan halfway through. Remove from the oven and let cool for five minutes, before removing the muffins from the pan to a wire rack. Serve warm.
