2 tablespoons unsalted butter
6 medium plums, sliced into 1/4-inch wedges
2 tablespoons sugar
2 tablespoons Cointreau
2 tablespoons (about 1/2 orange) fresh orange juice

Steps:

  • In a large skillet, melt butter over medium heat. Add plums and sprinkle with sugar. Saute, shaking skillet occasionally, until sugar has melted and begun to caramelize, about 5 minutes. Add Cointreau and orange juice. Remove skillet from heat. Carefully ignite, and gently swirl pan to loosen the cooked sugar and plums. Return to heat and cook until flame has extinguished and liquid is reduced by half about 3 minutes.

1 tablespoon cooking oil
3 cloves garlic, minced
¼ cup finely chopped green onions
1 (12 ounce) jar plum jam
½ cup chile sauce
¼ cup white grape juice
1 tablespoon fresh lime juice
½ teaspoon ground allspice

Steps:

  • Heat the oil in a saucepan over medium heat. Add the garlic and green onions; cook and stir until green onions are wilted, about 3 minutes. Stir in the plum jam, chili sauce, grape juice, lime juice, and allspice. Bring mixture to a boil; reduce heat to medium-low, and simmer until sauce thickens, about 30 minutes.
