In our quick and easy pad woon sen recipe, glass noodles, crispy tofu and crunchy veggies come together into a mouthwatering Thai-style stir-fry.

200 g of Glass Noodles
2 tbsp of Sesame Oil
1 Brown Onions
2 Garlic Cloves
4 Bird Eye Chillies
400 g of Firm Tofu
300 g of Pak Choi (Chinese Cabbage)
300 g of Shiitake Mushrooms
2 Carrots
200 g of Beansprouts
40 mL of Gluten-Free Soy Sauce
30 g of Maple Syrup
1 Lime
Spring Onions to taste
Bird Eye Chillies to taste
25 g of Peanuts
Fresh Cilantro to taste

Steps:

  • Soak the glass noodles in a bowl with water for 10 minutes. Meanwhile, sizzle the oil with onions, garlic, and chillies in a wok.
  • Next, add diced tofu and sear it over high-heat until crispy. Then, remove it from the wok and set it aside.
  • Now, add the drained noodles to the wok and cook them for 5 minutes.
  • Next, stir in the cabbage, mushrooms, carrots, and beansprouts and cook for 5 minutes over high heat.
  • Combine the sauce ingredients in a bowl, add it to the noodles along with the tofu, and stir-fry all for 5 more minutes.
  • Top the pad Thai with spring onions, chillies, and roasted peanuts, and serve with lime wedges and fresh cilantro.

4 cups water
12 ounces dried cellophane (glass) noodles
? cup sesame oil
1 shallot, thinly sliced
2 cloves garlic, minced
½ pound skinless, boneless chicken breasts, cut into bite-sized pieces
1 carrot, peeled and sliced diagonally
1 red bell pepper, cut into strips
1 zucchini, cut into matchsticks
4 ounces portobello mushrooms, quartered
2 tablespoons fish sauce, or to taste
2 tablespoons oyster sauce
1?½ teaspoons coconut aminos (soy-free seasoning sauce)
1 tablespoon lime juice, or more to taste
1 tablespoon chopped green onions

Steps:

  • Bring water to a boil. Add glass noodles and cook until transparent, 3 to 6 minutes.
  • Warm sesame oil in a wok or large nonstick skillet over high heat. Add shallot and stir-fry until slightly softened, about 30 seconds. Add garlic and continue to stir-fry until the shallot begins to color, about 2 minutes. Add chicken; cook and stir until opaque, 1 to 2 minutes. Add carrot and bell pepper; stir-fry for 4 minutes. Add zucchini and mushrooms; stir fry for 3 minutes more.
  • Push the contents of the wok to one side. Pour fish sauce, oyster sauce, and coconut aminos into the other side and wait until bubbling. Add cooked noodles. Quickly stir and toss to combine noodles, sauce, and chicken mixture. Sprinkle with lime juice and garnish with the green onions.
