4 ounces fresh ginger, peeled and thinly sliced (1 cup)
1 cup fresh lime juice
1 cup sugar

Steps:

  • In a small saucepan, combine the ginger, lime juice and sugar and bring to a boil. Boil for 2 minutes. Let cool to warm, then puree in a blender. Pour the puree into a fine strainer and press on the ginger to extract as much syrup as possible.

Number Of Ingredients 4

1?½ cups sugar
1 cup peeled and coarsely chopped ginger
1?½ tablespoons lime zest (about 3 limes)
2 cups water

Steps:

  • Process sugar, ginger, and lime zest in a food processor 15 seconds. Transfer to a small saucepan, and stir in water. Cook over medium heat 10 minutes. Remove from heat, and let stand 10 minutes. Pour through a fine wire-mesh strainer, discarding solids.
