Warm up this winter with a sweet and creamy gingerbread latte, filled with spices and whipped cream. You can enjoy it with or without a shot of espresso

1½ tsp ground ginger , plus extra to serve
½ tsp cinnamon
¼ tsp ground nutmeg plus extra to serve
2 tbsp soft brown sugar
½ tsp vanilla extract
600ml whole milk
2 shots hot espresso (optional)
whipped cream and mini gingerbread men, to serve

Steps:

  • In a bowl, mix together the spices, sugar and vanilla extract. Heat 100ml of the milk in a pan with the spice and sugar mix, whisking until the sugar has dissolved. Whisk in the remaining milk in additions until incorporated, then heat through  until steaming.
  • Put a shot of espresso in each glass (if using) and top up with the spiced milk. Top with whipped cream, extra spices and a mini gingerbread man.

FOR THE GINGERBREAD SYRUP:

1/2 c.

Molasses

1/2 c.

Water

1 1/2 tsp.

Ground Ginger

1 tsp.

Ground Cinnamon

1/4 tsp.

Ground Cloves

1/4 tsp.

Ground Nutmeg

1 tsp.

Vanilla Extract

FOR EACH LATTE:

3 tsp.

Gingerbread Syrup, Or More To Taste

1

Shot Espresso, Or 1 Ounce Very Strong Coffee

1/4 c.

Whole Milk

1/4 c.

Cream

Whipped Cream, For Serving (optional)

Steps:

  • For the gingerbread syrup:Place molasses, water, ginger, cinnamon, cloves, and nutmeg in a small saucepan and bring to a boil over medium heat. Remove from heat and stir in the vanilla extract.Strain through cheesecloth if desired. Store in a jar in the refrigerator. Makes about 3/4 cup syrup, or enough for 10-12 servings. For each gingerbread latte:Place 3-4 teaspoons of gingerbread syrup and a shot of espresso in a mug.Warm the milk and cream to 155ºF and froth. Pour over the syrup and espresso in the mug. Top with whipped cream if desired. Notes:1. This makes a single-sized latte. You can definitely make a larger latte if you prefer!2. You can also make this kid-friendly by omitting the coffee.3. For a more punchy flavor, make sure to use blackstrap molasses.
