Steps:

• Preheat oven to 325°. Spray the bottom and sides of an 8"-x-8" baking pan with cooking spray. Make the streusel topping: Whisk sugars, cinnamon, salt, and butter. Stir in the flour and espresso powder until a crumbly dough forms. Fold in half of the Pop Tart pieces and set aside. Make the cake: In a large mixing bowl, combine the flour, sugar, baking soda, espresso powder, and salt. Beat in butter, one piece at a time, until the dough forms into pea-sized crumbles. Add the egg, egg yolk, vanilla, and buttermilk, beating for another minute or two. Pour batter into greased baking dish. Break the crumb topping into small, pea-sized bits and sprinkle it on top of the batter, then top with remaining Pop-Tart pieces. Bake until a toothpick inserted into the center comes out clean, 38 to 40 minutes. Let cool for 20 minutes before serving.

• To make the dough, combine the butter, oil and dark brown sugar. Mix for a couple minutes until it is smooth. Add the egg and vanilla and mix again. Add the remaining ingredients and mix until just combined.
• To make the streusel, combine all the ingredients in a bowl and mix with a spoon or your hand. Start with 1/3 cup of flour. The mixture should stick together, but should also crumble when you run it through your fingers. If it isn't crumbling, add 1 tbsp additions of flour until it crumbles.
• Using a large cookie scoop, scoop a ball of dough onto a lined baking sheet. Using a spoon or your fingers, make an indent on the top of the dough. Sprinkle a couple tablespoons of the streusel on the top of the cookie, into the indent.
• Bake the cookies at 350 for 10-12 minutes. While they are baking, make the icing. Combine the powdered sugar, milk, and vanilla in a small bowl and whisk until it's smooth and runny. Once the cookies have cooled slightly, drizzle on lots of icing! Enjoy!
