GIGANTE BEANS RECIPE | EPICURIOUS

Gigante Beans Recipe | Epicurious image

These large white beans (_gigantes_ means "giant" in Greek) are a classic ingredient in Greek cooking. Timing note: The beans need to soak overnight, so plan accordingly.

Provided by Michael Symon

Total Time 15 hours (includes soaking time)

Cook Time 35 minutes

Yield Makes 12 servings

Number Of Ingredients 12

1 pound dried gigante beans, dried lima beans, or dried Great Northern beans
1/4 cup olive oil
3 cups chopped onions (about 2 medium)
3 garlic cloves, minced
8 cups (or more) low-salt chicken broth
1 28-ounce can whole plum tomatoes in juice (preferably San Marzano), tomatoes chopped, juice reserved
1/4 cup red wine vinegar
1/4 cup ouzo (Greek anise-flavored liqueur)
1 tablespoon dried oregano (preferably Greek)
1 teaspoon dried crushed red pepper
1 cup chopped fresh dill
Ingredient info: Dried gigante beans are large cream-colored beans from the mediterranean. They're available at some specialty foods stores and online at titanfood.com. Ouzo is available at some liquor stores.

Steps:

  • Place beans in large bowl. Pour enough water over to cover beans by 3 inches; let soak overnight. Drain beans; set aside.
  • Heat olive oil in heavy large pot over medium-high heat. Add chopped onions and garlic and sauté until onions are golden brown, 6 to 7 minutes. Add beans, 8 cups chicken broth, tomatoes with juice, vinegar, ouzo, oregano, and crushed red pepper to pot; bring to boil. Reduce heat, cover, and simmer until beans are tender, adding more broth by cupfuls to keep beans submerged and stirring occasionally, 2 to 3 hours, depending on freshness of beans. If necessary, uncover and cook beans until tomato mixture thickens and liquid is slightly reduced, 10 to 15 minutes. Season beans to taste with salt and freshly ground black pepper. DO AHEAD: beans can be made up to 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and keep chilled. Rewarm beans before continuing, adding more chicken broth by 1/2 cupfuls if beans are dry.
  • Stir chopped fresh dill into beans. Serve with octopus .

GIANT WHITE BEAN (LIMA BEAN) SALAD RECIPE - THE HUNGRY BITES

Giant white bean (lima bean) salad recipe - The Hungry Bites image

These giant white beans (a.k.a. Lima beans or butter beans) make the easiest, healthy salad recipe! Just drizzle some mediterranean dressing and you have the perfect lunch.

Provided by Makos

Categories     Appetizer    Lunch    Side Dish

Total Time 1500 minutes

Prep Time 10 minutes

Cook Time 50 minutes

Yield 6

Number Of Ingredients 12

1 pound (450-500 grams) dried Giant white beans/lima beans
1 large bunch parsley (chopped)
2-3 green onions (shallots) ( chopped)
2 cups cherry tomatoes cut in half ((or 2 large tomatoes, chopped))
1/2 cup sliced and pitted olives
2 tablespoons capers (optional)
4 tablespoons olive oil
the juice from half a lemon (or to taste)
freshly ground black pepper
1 tablespoon dried oregano
a pinch of salt
1-2 tablespoons dijon mustard (optional)

Steps:

  • Soak the beans: soak the beans in a large bowl filled with water and one tablespoon salt. The water should be at least twice the height of the beans. You should soak them for 24-48 hours (or at least overnight, in case you forget!)
  • Boil the beans: Rinse them well, transfer them in a pot and fill with water (if the water from your tap is hard, use bottled water). Don't add any salt. Open the heat and simmer gently for 45-60 minutes or until tender. You may have to skim some foam at the beginning with a spoon. When the beans are ready, take them off the heat and fill the pot with tap water. Drain, and refill the pot with water (this will prevent the skins from peeling off).
  • Make the salad: transfer the Giant white beans to a large serving bowl and mix them gently with the rest of the ingredients.
  • Make the dressing: transfer everything into a jar and shake well to combine. Pour the dressing over the salad. Alternatively, you can just add the dressing ingredients to the salad and mix gently to combine. Eat!

GIGANTES (GREEK LIMA BEANS) RECIPE | ALLRECIPES
This is a family recipe. In Greek, it's called 'Gigantes' which translates as 'Giants.' Try to find the largest dried lima beans possible. My aunt adds small canned sausages, but I prefer this meatless. Serve with feta cheese and a crusty bread. You can also substitute 2 teaspoons parsley for the dill if you prefer.
