Get baking with the kids who'll love this giant cookie that they can adapt with their favourite treats like marshmallows, pretzels, nuts, toffee or fudge

200g butter at room temperature, plus extra for the pan
250g light brown sugar
2 egg yolks
½ tsp vanilla extract
275g plain flour
1 tsp baking powder
150g chocolate chips
100g other cookie fillings, such as pretzels, chopped nuts, pieces of fudge or toffee, marshmallows
vanilla ice cream, to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Tip the butter and sugar into a large mixing bowl, beat until combined, then stir in the yolks and vanilla. Tip in the flour, baking powder, chocolate chips, a pinch of sea salt and any other fillings you want to add. Mix until a crumbly dough forms.
  • Lightly butter a 25cm ovenproof frying pan. Spoon in and flatten the cookie mixture. For a gooey dessert, bake for 20 mins, leave to rest for 5 mins, then scoop straight from the pan and serve with ice cream, if you like. For a firmer cookie you can cut, bake for 30 mins, then leave to cool completely before cutting into wedges.

175 g unsalted butter, softened
100 g caster sugar 
100 g light brown soft sugar 
2 medium eggs 
1 tsp. vanilla essence
250 g self-raising flour 
1/2 tsp. salt
200 g dark chocolate chips 
125 g unsalted butter, softened
250 g icing sugar 
1/4 tsp. vanilla essence 
Splash of milk 
Your choice of food colourings
Your choice of decorations 

Steps:

  • Preheat oven to 200ºC (180ºC fan) and grease a 23cm round springform tin.
  • Cream the butter and sugars together until light and fluffy (about 5 mins). Beat in the eggs and vanilla. Fold in the flour and salt with a large metal spoon until combined, then fold in the chocolate chips.
  • Tip into prepared tin and spread to level. Bake for 30 mins. Allow to cool completely in the tin.
  • Make the buttercream: beat butter and sugar together until smooth then beat in vanilla and milk. Divide the mixture into as many colours as you have, leaving one white. Pipe your desired message onto your cookie and decorate.
