Gluten Free Tortellini Soup - gatherednutrition.com image

Gluten free tortellini soup, with a vegetarian option. Easy, delicious, and packed with veggies!

Number Of Ingredients 16

1 lb ground beef (optional; leave out for vegetarian)
Olive oil
4 cloves of garlic, minced
1 medium yellow or white onion, finely diced
2 large carrots, sliced
2 stalks of celery, sliced
Salt and pepper, to taste
Pinch of red pepper flakes
1 tsp Italian seasonings
10 oz frozen chopped baby spinach
8 cups low sodium chicken or vegetable broth
1 (17.6) carton of crushed tomatoes
9 oz fresh (refrigerated) gluten free tortellini 
Juice of 1/2 a lemon
Sourdough bread (my favorite gluten free sourdough linked here)
Parmesan

Steps:

  • Heat a large dutch oven or large pot with a lid over medium heat, then add your ground beef. Season well with salt and pepper. Cook until no longer pink, then remove from pot and set aside. *Skip this step and just go to step 2 for vegetarian.
  • Add 1-2 tbsp of olive oil to the pot, then stir in the garlic, onion, celery, and carrot. Season well with salt and pepper, pinch of red pepper flakes, and 1 tsp Italian seasoning. Allow to cook for 8 minutes, stirring occasionally.
  • Stir in your frozen chopped spinach, then add your crushed tomatoes, broth, and your cooked beef. Bring to a simmer, cover, and allow to simmer until veggies are soft, about 20-25 minutes.
  • Remove lid, then add your tortellini and cook according to package instructions (mine took 4 minutes). Turn off heat, add your fresh lemon juice, stir, taste and adjust seasonings as needed and serve. Serving tip: be sure to add a few ladles full of just broth to the bowl in addition to the rest of the soup to keep it nice and soupy for dipping bread.

gluten-free flour, such as Cup4Cup

xanthan gum

1 tsp.

Steps:

  • In a large bowl, whisk together gluten-free flour, xanthan gum, and salt.  Make a large well in the center of your flour mixture and add eggs. Using a fork, beat eggs until mixed, then slowly integrate flour into eggs until no dry flour is left and a ball of dough has formed. (You may have to switch from a fork to your hands near the end of the mixing process.) Turn dough out onto a lightly floured surface and knead until smooth, 2 to 3 minutes. Cut dough into quarters and wrap all but one in plastic wrap. On a lightly floured surface, roll uncovered dough into a long rectangle about 1/4” thick. Set pasta maker to widest setting and pass the rolled out dough through 2 times. Fold the short ends of the dough to meet in the center of the rectangle, then fold in half so that the dough is in quarters. Roll out again to the dough is 1/4” thick, then pass through pasta maker 2 more times. Adjust pasta maker to be 1 degree more narrow and repeat process. Continue rolling, folding, and adjusting until desired thickness is reached. Dough should be slightly translucent. Place rolled out dough onto a lightly floured surface and dust with more flour. Repeat process with remaining dough quarters.  Adjust pasta maker to desired width of noodles and feed dough through machine. Divide noodles into equally sized portions and curl into nests. Place on a parchment lined baking sheet and cover with a clean kitchen towel until ready to cook. To cook: bring a large pot of salted water to a boil and add pasta. Boil, stirring gently with a wooden spoon, until tender, 2 to 3 minutes.  Drain and serve with your favorite pasta sauce.
