My husband’s German family calls this Oma’s apfelkuchen, which translates to "Grandma’s apple cake." They’ve been sharing the recipe for more than 150 years. I use Granny Smith apples, but any variety works. —Amy Kirchen, Loveland, Ohio

5 large egg yolks
2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened
1-1/4 cups sugar
2 cups all-purpose flour
2 tablespoons cornstarch
2 teaspoons cream of tartar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

2 tablespoons butter
5 cups shredded red cabbage
1 cup sliced green apples
? cup apple cider vinegar
3 tablespoons water
¼ cup white sugar
2?¼ teaspoons salt
¼ teaspoon black pepper
¼ teaspoon ground cloves

Steps:

  • Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

  • When chicken is done, drain the oil out of the skillet and place the potatoes in the skillet with the chicken. Slowly pour the 'potato water' over the skillet mixture. Add whole cloves, cover and simmer. As the mixture sets it prepares its own gravy in the skillet, so the longer it simmers, the better! When the consistency is to your taste, remove from heat and serve.

  • Put whole potatoes with the skin on in large pan and boil until just tender through (I check with a wooden skewer). You don't want them "mushy." Drain and cover with cold water and set aside. While potatoes are cooking, you can start making the “sauce.” Cut bacon into 3/4-inch pieces. Cut green pepper and onions into small pieces (like on pizza) and mince the garlic. Add bacon, onions, and green pepper to frying pan and sauté until tender; add garlic towards the end so it doesn't burn. When these ingredients are tender, do not drain bacon grease. Add vinegar to the pan until it is about 1 inch deep in the pan. Bring to a simmer and start adding sugar until mixture becomes a sweet/sour flavor. Be careful – the vinegar "fumes" can "choke" you, so stand back from the pan as you pour the vinegar. Simmer this mixture for about 10-12 minutes until the flavors blend. Watch closely while simmering; you don't want the mixture to burn. Peel the potatoes and cut into bite-size pieces. Put the potatoes back in the bowl. Pour cooked mixture over potatoes and mix thoroughly and gently with two large spoons. Place mixture in metal pan and put in warm oven or gently cook in frying pan. Mix each serving to get full favors. Serve warm and enjoy! Yummy!
