These spiced honey bars are a twist on the German Lebkuchen Christmas cookie that is similar to gingerbread.

3/4 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter softened
1/3 cup honey
1 large Land O Lakes® Egg
1 tablespoon lemon juice
1 tablespoon freshly grated lemon zest
2 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/3 cup finely chopped blanched almonds
1/3 cup chopped golden raisins
Glaze
3/4 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon honey
Garnish
Candied cherries, if desired
Whole almonds, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch baking pan with no-stick cooking spray. Set aside.
  • Combine brown sugar, butter, 1/3 cup honey, egg, 1 tablespoon lemon juice and lemon zest in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, cinnamon, baking soda, allspice, cloves and nutmeg; beat at low speed until well mixed. Stir in blanched almonds and raisins.
  • Spread batter into prepared pan. Bake 18-20 minutes or until toothpick inserted in center comes out clean. Cool completely.
  • Stir together all glaze ingredients in bowl until smooth. Drizzle over bars. Garnish with candied cherries and almonds, if desired.

We get German Honey Bars at a local bakery here in Indy. They are my husbands favorite cookie. I have looked high and low for the recipe with no results. My husband found this recipe in a cookbook he was looking through at Cracker Barrel Country Store, so he bought it.   • *Notes: After 10 minutes the honey molasses mixture was still very warm and I didn't want to add the egg and have it turn out scrambled, so I set the bowl on a few ice cubes wrapped in a paper towel for a couple of minutes. The dough being slightly sticky is an understatement. It is very sticky and I had a hard time rolling it out. Finally placed a piece of waxed paper over the dough and rolled with rolling pin. It was a little better but dough still stuck to the waxed paper. I also lined my pan with parchment paper, rather than greasing the pan. I did not add the almonds, because the honey bars we get at the bakery do not have almonds in them. These honey bars are bolder in taste with the spices and much darker in color than the ones we get at the bakery. I think with a little tweaking with spices and playing with a different kind of molasses I can get a little closer to the bakery version.
