BRICE PALMER’S FRIED ALLIGATOR BITES RECIPE - SOUTHERN ...
I love fried gator tail, and the local restaurant in my area, The Black Hammock, has some of the best I’ve eaten. Unfortunately, I don’t have their recipe. We can actually purchase gator meat, fresh or frozen, at some fresh seafood houses so this is something I would love to try cooking myself. This recipe was taken from the Texas Cooperative Extension Alligator Cookbook and is posted there as a recipe from "Tony Chachere’s Cajun Country Cookbook". It sounds very good, and all recipes I’ve ever seen are very similar with the only noted differences being in the batter and seasoning ingredients. I hope you enjoy this one! Steps:
- Cut the alligator into 1” cubes and soak in milk (in the refrigerator) for 2 to 3 hours.
- Drain milk then season meat (in the same bowl) with Tony’s Creole Seasoning.
- Add the mustard to the bowl and mix well, coating meat with mustard.
- Mix Fish Fry and pancake mix together in shaking bag. Drop meat cubes in shaking bag and coat well.
- Deep fry at 375 F for 5 to 6 minutes or until golden brown.
- Serve hot with French fries and seafood sauce or other dipping sauce.

Steps:
- Place alligator meat in a medium bowl, and mix with vinegar, salt, and pepper. Cover, and refrigerate about 10 minutes.
- Pour oil into a large skillet to a depth of 1 inch, and heat over a medium-high flame.
- Add to a large resealable bag the flour, cornmeal, garlic powder, cayenne pepper, and black pepper. Squeeze off excess liquid from meat, and add one handful of meat to the resealable bag. Shake to coat. Remove meat, shake off excess flour, and set on a plate. Repeat with remaining meat.
- When oil is hot, place meat pieces into oil, being careful not to overcrowd. Fry until golden brown, about 3 minutes. Remove to paper towels, and serve hot.
- To prepare dipping sauce, mix together in a small bowl the mayonnaise, horseradish, brown mustard, and red wine vinegar.

I'm originally from NY and now I live down south. I wasn't sure if I would like gator at all but its actually pretty good. You might not find the meat up north though. Oh and yes it does taste like chicken...lol. We usually go to a local wings place here that has gator bites served with honey mustard and i wanted to try making them at home. I found a recipe online and changed it by adding white cornmeal to the pancake flour. Was a big hit!

- Add the pieces to oil that has been heated to 375 and cook for 6 mins turning them at 3 mins. Do these in batches. I used a cast iron pan. Serve with your favorite honey mustard dressing. You could also do this with chicken to make nuggets if you cant find gator or do not like gator meat.
