3 pounds chicken wings
¼ cup olive oil
1 teaspoon table salt
¾ teaspoon black pepper, divided
½ cup (4 oz.) unsalted butter, melted
4 garlic cloves, minced (about 1 1/2 Tbsp.)
¼ teaspoon crushed red pepper
4 ounces Parmesan cheese, grated (about 1 cup), divided

Steps:

  • Preheat oven to 400°F. Set a wire rack inside 2 rimmed baking sheets.
  • Toss together wings, oil, salt, and 1/2 teaspoon of the black pepper in a large bowl to coat. Divide wings between baking sheets, and place in a single layer. Bake in preheated oven until browned and crispy, about 50 minutes, turning halfway through.
  • When wings are almost finished cooking, heat butter, garlic, crushed red pepper, and remaining 1/4 teaspoon black pepper in a small saucepan over medium-low until fragrant, 2 to 3 minutes. Remove from heat, and stir in 3/4 cup of the Parmesan.
  • Remove wings from oven, and immediately transfer to a large bowl. Add garlic butter mixture; toss to coat. Sprinkle with remaining 1/4 cup Parmesan.

1 tablespoon Gold Medal™ all-purpose flour
2 teaspoons baking powder
1 1/4 teaspoons garlic powder
1 teaspoon salt
2 lb chicken wings, patted dry
2 tablespoons butter, melted
1/4 teaspoon Italian seasoning
2 tablespoons grated Parmesan cheese
1 tablespoon finely chopped fresh parsley

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with foil and a cooling rack.
  • Add flour, baking powder, 1 teaspoon of the garlic powder and the salt to 1-gallon resealable food-storage plastic bag. Add wings; shake to completely coat. Place wings on rack in pan. Bake 35 to 40 minutes, turning once halfway through bake time, until lightly browned and juice of chicken is clear when thickest part is cut to bone (at least 175°F).
  • Set oven control to broil. Broil wings 4 to 5 minutes or until skin is lightly crisped.
  • Meanwhile, in small bowl, mix melted butter, remaining 1/4 teaspoon garlic powder, the Italian seasoning and 2 teaspoons of the Parmesan cheese. Brush wings with butter mixture; sprinkle with remaining 4 teaspoons grated cheese. Transfer to serving platter; top with parsley.

  • Pat the chicken wings dry with paper towels. Line 2 rimmed baking sheets with aluminum foil and top each with a wire rack. Spray the racks with nonstick cooking spray. 
    Stir together the salt, baking powder, and garlic powder in a large bowl. Add the chicken wings and toss until evenly coated. Divide the wings evenly between prepared racks, leaving space between each wing. Let stand at room temperature for 1 hour or refrigerate, uncovered, for up to 24 hours.  
    Preheat the oven to 450°F with racks in the upper and lower thirds of the oven. If the wings were refrigerated, let stand at room temperature for 30 minutes. Bake the wings for 25 minutes. Flip the wings over and rotate the baking sheets from upper and lower oven racks. Continue baking the wings until crispy and golden, 25 to 30 minutes.  While the wings are baking, process the Parmesan in a food processor until finely ground, 30-45 seconds. Reserve 2 tablespoons of the Parmesan for garnishing. Transfer the remaining Parmesan to a large bowl and stir in the butter, garlic red pepper flakes and lemon juice.  Transfer wings to the bowl with the butter mixture and toss to coat. Transfer the wings to a serving platter. Sprinkle with reserved Parmesan and garnish with chives.
