Steps:
- Heat the butter and olive oil in a large skillet over medium heat. Place salmon in the skillet, and season with garlic, lemon pepper and salt. Pour 1/4 cup water around salmon. Place tomatoes and cilantro in the skillet. Cover, and cook 15 minutes, or until fish is easily flaked with a fork.
- Bring 2 cups water to boil in a pot. Remove form heat, and mix in couscous. Cover, and let sit 5 minutes. Serve the cooked salmon over couscous, and drizzle with sauce from skillet.

- Preheat the oven to 400 degrees F.
- In a mixing bowl, combine all ingredients for the potatoes. Toss to coat evenly.
- Transfer to a baking sheet and spread evenly. Roast for 10 minutes, then slightly move the potatoes to the sides of the baking sheet, enough for the salmon to fit in lengthwise.
- For the salmon, combine all its ingredients, then pour and rub it all over the salmon.
- Place the salmon onto the baking sheet with the potatoes, then return back to the oven. Roast for another 15 minutes, or until both potatoes and salmon are fully cooked through. As an additional step, you may broil the salmon at the oven’s highest setting briefly to crisp up the fish.
- Serve with lemon wedges, tartar sauce, and vegetables of your choice.

- Pre-heat gas grill/bbq to high Rinse salmon, dry with paper towels, and place in plate or dish to carry to grill Sprinkle garlic salt (medium light) and lemon pepper (generously) on outside of salmon. Turn salmon over and repeat. Salmon should look well covered in seasoning. Spray grill and place salmon on grill. Cover and grill for approximately 10 minutes. Turn and grill for an additional 4 minutes. (This timing is for a 2.5lb fillet about 1 1/4 inches thick at it's thickest part. Adjust timing for thicker or thinner fillets. Remove from grill and let sit for 3-5 minutes. I recommend serving with Garlic Rice and Grilled Asparagus (see my recipes for these).

- Season salmon all over with salt and pepper. In a large skillet over medium-high heat, heat oil. Add salmon, skin side-up, and cook until golden and seared, 6 minutes. Flip and cook until skin is crispy, about 5 minutes. Remove salmon from skillet and transfer to a plate. Reduce heat to medium, and melt butter.
