Cloud bread has the flavor of sandwich bread but without the gluten and the carbs. The secret to the consistency of this light and airy bread is to whip the egg whites into stiff peaks. This easy-to-make bread melts in your mouth with the combination of three different cheeses, including cream cheese, Parmesan cheese and Mozzarella cheese. Garlic powder, oregano, and parsley mix perfectly with the flavor of the cheese. Serve this bread as an appetizer dipped in pizza or pesto sauce. It makes an excellent side dish for spaghetti or a salad. The bread can be made a day ahead.

3 Tbsp Low fat cream cheese at room temperature
0.5 tsp Baking powder
2 Tbsp Regular butter
0.5 Tbsp Garlic powder
0.5 Tbsp Dried oregano
12 oz Part-skim mozzarella cheese cut into 12 even slices
6 Tbsp Grated Parmesan cheese
6 Tbsp Fresh parsley chopped

Steps:

  • Place oven rack in middle of oven. Preheat oven to 300°F. Cover a large sheet pan with parchment paper; lightly coat with cooking spray.
  • Separate egg yolks from whites; place each in separate mixing bowls. Whisk cream cheese into bowl with yolks until smooth. Add baking powder to bowl with whites; beat on high speed with an electric mixer until fluffy and soft peaks form. Slowly and gently fold egg yolk mixture into egg white mixture. Spoon mixture into 12 even mounds onto prepared baking sheet. Bake until lightly browned, 18 to 20 minutes.
  • Meanwhile, prepare garlic mixture. Melt butter in microwave or in a small saucepan; stir in garlic powder and oregano.
  • Preheat broiler to high. Brush butter mixture over cloud bread; top each with 1 slice mozzarella. Broil until cheese melts, 1-2 minutes; garnish each with 1/2 Tbsp Parmesan and parsley.
  • Serving size: 1 piece

6 large Pete and Gerry's Organic Eggs, separated
1/2 teaspoon cream of tartar
1/4 teaspoon salt
3 ounces (85g) cream cheese
1/2 teaspoon garlic powder
1/2 cup (50g) grated Parmesan cheese, seperated

Steps:

  • Preheat oven to 350F and line two baking sheets with parchment paper.
  • Separate egg whites and yolks into separate bowls, ensuring that the whites stay clean, as any fat from the yolks will keep them from whipping to full volume. Beat egg whites, cream of tartar, and salt until mixture is fully opaque and has formed stiff peaks.
  • In a separate bowl, microwave cream cheese for 20-30 seconds until warm and very soft (softer than room temperature). Add the egg yolks, 1/4 cup grated cheese, and garlic powder, then beat until smooth and slightly increased in volume (a few small specks of cream cheese are okay).
  • Gently fold whites into the yolk mixture in two batches until no streaks remain, being careful to not deflate the whites.
  • Drop batter on to prepared pan in 10 evenly-sized mounds (5 mounds per baking sheet; about 1/2 cup batter each), and sprinkle tops with remaining cheese. Bake until golden brown and fully cooked through, 20-25 minutes.
  • Store in fridge for up to 5 days, or freeze for up to 1 month.
  • Looking for just a few pieces of cloud bread? You can easily divide this recipe in half to make 4-5 per batch.
  • While cloud bread can be carefully sliced in half to make your favorite sandwich with a keto twist, it's much more delicate than traditional bread. If you have particularly wet or heavy sandwich fillings, we recommend using one whole piece of cloud bread as the top of your sandwich and a second one as the bottom.
  • No garlic powder in your pantry? You can make this garlic Parmesan cloud bread by replacing the salt and garlic powder for 3/4 teaspoon garlic salt.
