If you've never cooked oysters on the grill, you're in for a treat. Grilling oysters whole saves you the trouble of shucking them--they magically pop open when cooked. A simple garlic herb butter adds richness and a bright pop of flavor to this impressive appetizer. To pretty it up use Irish butter, which is extra-golden because Irish cows typically enjoy an all-grass diet.

3 tablespoons unsalted butter, preferably Irish
1 clove garlic, minced
2 tablespoons minced fresh parsley
1 tablespoon chopped fresh chives
½ teaspoon lemon zest
1 teaspoon lemon juice
¼ teaspoon ground pepper
Pinch of sea salt
24 large oysters, scrubbed

Steps:

  • Preheat grill to medium-high.
  • Heat butter and garlic in a small saucepan until melted, about 1 minute. Remove from heat and stir in parsley, chives, lemon zest and juice, pepper and salt until well combined.
  • Grill oysters, cupped-side down, until they pop open and the meat is firm, about 5 minutes. Transfer the oysters to a platter, cupped-side down (to retain as much of the juice as possible). Discard any that do not open. Run an oyster knife or paring knife under the meat to separate it from the top shell. Top each oyster with a little of the herb butter and serve immediately.

Throwing the element of smokiness from the grill, and you’ve got yourself a little bite of heaven. Oysters are incredibly quick cooking, so allowing them to warm gently as the butter melts over the meat is the way to go.

Yield Serves 6 (serving size: 4 oysters)

Number Of Ingredients 10

1 cup (8 oz.) salted butter, softened
2 tablespoons finely chopped fresh flat-leaf parsley
4 teaspoons finely grated fresh horseradish
2 teaspoons finely chopped garlic (2 garlic cloves)
2 teaspoons Worcestershire sauce
1 teaspoon lemon zest (from 1 lemon)
½ teaspoon kosher salt
½ teaspoon paprika
½ teaspoon hot sauce
2 dozen oysters on the half shell (3- to 4-inch diameter)

Steps:

  • Preheat grill to high (450°F to 500°F). Stir together butter, parsley, horseradish, garlic, Worcestershire, zest, salt, paprika, and hot sauce in a bowl until well blended. Place about 2 teaspoons butter mixture in each oyster. Arrange oysters in a single layer on oiled grates, keeping oysters as level as possible. Grill, uncovered, until butter is completely melted and just starting to bubble, about 7 minutes.
  • Carefully remove oysters from grill, and serve immediately.
