We found that fish cooks best on a nonstick grill pan with a dome-shaped lid, so the fish steams while it gets great grill marks. Serve with a tossed green salad and couscous.

Yield 4 servings (serving size: 1 fillet and about 1 tablespoon sauce)

Number Of Ingredients 11

Sauce:
2 tablespoons chopped fresh basil
2 tablespoons fresh lemon juice
1 tablespoon extravirgin olive oil
½ teaspoon grated lemon rind
2 garlic cloves, minced
Salmon:
Cooking spray
4 (6-ounce) salmon fillets
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

Steps:

  • To prepare sauce, combine first 5 ingredients in a small bowl; set aside.
  • To prepare fish, heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish evenly with salt and pepper; add fish to pan. Cover and grill 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with sauce.

1-1/2 cups fresh basil leaves
3 tablespoons plus 2 teaspoons olive oil
1-1/2 teaspoons minced garlic
3/4 teaspoon pepper
1/2 teaspoon lemon juice
1/4 teaspoon salt
1 tablespoon plus 4 teaspoons shredded Parmesan cheese, divided
4 salmon fillets (6 ounces each)

Steps:

  • For pesto, combine the basil, oil, garlic, pepper, lemon juice, salt and 1 tablespoon Parmesan cheese in a food processor; cover and process until finely chopped. , Place the salmon in a greased 13-in. x 9-in. baking dish. Spread 2 tablespoons pesto over fillets. (Cover and refrigerate remaining pesto for another use.) , Bake, uncovered, at 400° for 20-22 minutes or until fish flakes easily with a fork. Sprinkle with remaining cheese. Bake 2-3 minutes longer or until cheese is melted.
