Total Time 1 hours 15 minutes

Prep Time 40 minutes

Cook Time 35 minutes

Yield Makes 20 - 25

Number Of Ingredients 16

50g butter , cubed
300g strong white bread flour
7g sachet fast-action dried yeast
1 tbsp caster sugar
200g block mozzarella , cut into 1.5cm cubes
65g gruyère , coarsely grated (optional)
100g butter
2 garlic cloves , crushed
1 rosemary sprig, leaves picked and finely chopped
1 tbsp olive oil , plus extra for the bowl and baking sheet
1 garlic clove , sliced
250g passata
1 tsp red wine vinegar
1 tsp caster sugar
pinch of chilli flakes
½ small bunch of basil , torn, plus extra to serve

Steps:

  • Heat 175ml water in a saucepan until steaming, then add the butter. Remove from the heat and leave to cool until the mixture is just warm (it should not be hot). Combine the flour, yeast, sugar and 1 tsp salt in a large bowl or stand mixer. Add the cooled butter mixture, and mix to a soft dough using a wooden spoon or the mixer. Knead for 10 mins by hand (or 5 mins using a mixer) until the dough feels bouncy and smooth. Transfer to an oiled bowl and cover with a clean tea towel. Leave somewhere warm to rise for 1½-2 hrs, or until doubled in size. Alternatively, leave to prove in the fridge overnight.
  • Oil and line a baking sheet with baking parchment. Knock the air out of the dough, then knead again for several minutes. Flatten a small piece of dough (about 20g) into a disc, and put a cube of the mozzarella and a pinch of the gruyère into the middle of the disc. Enclose the cheeses with the dough, then roll into a ball. Transfer to the prepared baking sheet. Repeat with the remaining cheese and dough, placing the dough balls ½cm apart on the baking sheet – they should be just touching after proving. Cover with a clean tea towel and leave somewhere warm to rise for 30 mins.
  • Meanwhile, make the garlic butter. Melt the butter in a small pan over a low heat, then stir in the garlic and rosemary. Remove from the heat and set aside until needed. Heat the oven to 180C/160C fan/gas 4. Brush the risen dough balls with the garlic butter, then bake for 25-30 mins until the dough balls are cooked through and the middles are oozing.
  • While the dough balls are baking, make the tomato sauce dip. Heat the oil in a saucepan and fry the garlic for 30 seconds. Tip in the passata, vinegar, sugar and chilli flakes, and simmer for 10 mins until thickened. Season to taste and stir in the basil. Brush the warm dough balls with any remaining garlic butter, then serve with the tomato sauce dip on the side for dunking.

GARLIC BREAD RECIPE | JAMIE OLIVER

Garlic bread recipe | Jamie Oliver image

Everyone loves garlic bread, and as you’d expect, this version totally over delivers. Soft, spongy and with the crunchiest backsides you’ve ever seen, as well as being bombed with pungent garlic butter – what’s not to love? One of my favourite ways to eat this is simply with a massive green salad for lunch, but of course the great thing about garlic bread is that it can be a side for many things – chilli, pasta, soup, part of a picnic – you name it.

Total Time 1 hours

Yield 35 pieces

Number Of Ingredients 8

800 g strong bread flour plus extra for dusting
1 x 7 g sachet of dried yeast
100 g stale breadcrumbs
1 bulb of garlic
500 g unsalted butter (at room temperature)
1 lemon
1 bunch of fresh flat-leaf parsley (30g)
1 level teaspoon cayenne pepper

Steps:

    1. Put the flour, yeast and 1 teaspoon of sea salt into a large bowl and make a well in the middle. Gradually pour in 550ml of tepid water, continuously stirring and bringing in the flour from the outside as you go to form a rough dough.
    2. Transfer to a flour-dusted surface and knead for 10 minutes, or until smooth and springy. Place in a bowl, cover with a damp tea towel and prove in a warm place for 1 hour, or until doubled in size.
    3. Meanwhile, make the butter – this is a big batch, to make good use of your time, and you can freeze the extra for rainy days. Use a garlic crusher to crush the garlic into the softened butter, finely grate over the zest of ½ a lemon, finely chop and add the parsley (stalks and all), the cayenne and a pinch of salt, then mix it all together.
    4. Remove one quarter to use in this recipe, then place the rest on a sheet of greaseproof paper, roll it up into a log and twist the ends like a Christmas cracker, then pop into the freezer.
    5. After 30 minutes, get the butter out and slice it up to pre-portion, then re-roll and return to the freezer, where it will keep very happily for up to 6 months.
    6. Spread one third of your soft butter portion all around the base and sides of a large metal tray (25cm x 35cm), then scatter in the breadcrumbs and shake around into an even layer so they stick to the butter.
    7. Divide up the dough into 35 pieces, then, one-by-one, roll each one into a ball and place in the tray in rows – 5 balls across and 7 balls long is perfect.
    8. Bomb over another third of the soft butter, in and around the balls. Leave to prove for another 1 hour 30 minutes, or until doubled in size again.
    9. Preheat the oven to 190ºC/375ºF/gas 5.
    10. Sprinkle the balls with a little salt, then bake on the bottom shelf of the oven for 30 minutes, or until lovely and golden.
    11. Bomb over that final third of your soft butter and spread it around to give the bread a beautiful shine.
    12. Whack the tray in the middle of the table or at the centre of your picnic for sharing, and let everyone tear off their own pieces.

SPINACH BALLS RECIPE - FOOD.COM
I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

Dip the biscuit pieces in melted butter, then place them in a gallon-size resealable plastic bag and top with 1 teaspoon garlic powder and parmesan cheese. Shake to coat. Pour coated dough balls into a large casserole dish, spreading them out in an even layer. Set aside. Make the rest of the pizza: Place ground beef and remaining 1/2 teaspoon garlic powder in a sauté pan over medium heat. Cook beef, breaking it up into crumbles with the back of a spatula, until it's fully browned. Drain and mix with marinara sauce. Pour meat sauce onto pizza, covering the knots. Top with mozzarella cheese and pepperoni slices. Bake in the oven, 20 to 22 minutes, or until cheese is melted and bubbly, and garlic knots are puffed up and lightly golden (if you can see them).
