2 pounds ground chuck
1 medium onion, chopped
3 to 4 garlic cloves, minced
2 tablespoons chili powder
2 teaspoons ground cumin
1 to 2 tsp. ground red pepper
1 teaspoon paprika
1 (6-oz.) can tomato paste
1 (14.5-oz.) can beef broth
1 (12-oz.) bottle dark beer
3 (8-oz.) cans tomato sauce
2 (15-oz.) cans pinto beans, drained and rinsed
1 (4.5-oz.) can chopped green chiles, undrained
1 tablespoon Worcestershire sauce

Steps:

  • Cook first 3 ingredients in a 5- to 6-qt. Dutch oven over medium heat, stirring occasionally, 8 to 10 minutes or until meat crumbles and is no longer pink. Drain well, and return to Dutch oven. Add chili powder and next 3 ingredients; cook 1 minute. Add tomato paste, and cook 1 minute. Add remaining ingredients. Bring to a boil. Cover, reduce heat to low, and simmer 2 hours.

A simple Crock Pot chili that's robust and full of flavor. It's hearty, nicely seasoned, and packed with meat and beans. Fresh veggies make this chili a bit different. We loved the peppers in this chili. The red bell peppers are milder and almost sweet. The number of jalapenos scared us at first but totally worked in the dish (we removed the seeds). Slow cooking this recipe gives the flavors time to mingle. Serve this on your next game day.

2 pound(s) ground beef
8 slice(s) bacon
1 large onion
1 - green bell pepper
1 - red bell pepper
16 ounce(s) red kidney beans (drained)
1 can(s) stewed tomatoes (14 oz)
3 cup(s) spicy V8 juice
8 ounce(s) beer, not lite
2 tablespoon(s) cocoa, unsweetened
2 tablespoon(s) garlic powder
2 tablespoon(s) garlic salt
3 tablespoon(s) onion powder
1/2 tablespoon(s) cumin
1/3 cup(s) good quality chili powder
1 tablespoon(s) Worcestershire sauce
8 - jalapeno peppers
2 - habanero pepper, fresh
1 tablespoon(s) fresh lime juice
1 tablespoon(s) spicy yellow mustard

Steps:

  • Brown meat and bacon drain. Put in Crock Pot. ( I like to add the bacon dropping to the cooker.)
  • Chop peppers and onion. NOTE: For extra heat, do not remove seeds. Add to Crock Pot.
  • Add all spices; stir to mix.
  • Add beer and V8 juice and all other ingredients. Give it another stir place lid on the cooker.
  • Set to high for 2 hours. Then to low for at least another 3.
  • Side note: spices are strictly to taste. Add more or less as the chili cooks. Hope you enjoy it.

The first time I tried this chili I was floored! It has wonderful flavors, and is very spicy and very addictive. If you don't like heat, adjust the ingredients. It's perfect at a football tailgate party or picnic. If you like a roasted flavor, bake the garlic before pressing it. For the beer, a hoppy pale ale works well, as does a dark stout. I've also experimented with adding a cup of coffee to the mix to give it a roasted coffee flavor. It also freezes well.

Heat oil in large, heavy pot over medium-high heat. Season sirloin tip cubes with salt and pepper. Brown in two batches for 3 to 4 minutes per batch; set beef cubes aside once browned.
