- In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
- In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
- While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.

- Heat about 1-1 ½ inches of vegetable oil in a skillet to 375 degrees F. Line a wire rack with paper towels.
- Combine flour, sugar, baking powder, baking soda, and cinnamon in a bowl.
- Whisk together eggs, milk, syrup, and vanilla; add this mixture to the flour mixture and whisk until smooth.
- Cover the bottom of a funnel spout with your finger and add 1 cup batter into the funnel.
- Hold the funnel several inches above the hot oil and release your finger from the funnel hole, moving the funnel in a circular or criss-cross motion until all the batter is released. Scrape any leftover batter with a rubber spatula, if need be.
- Fry for about 2 minutes or funnel cakes are golden brown. Transfer to the paper towel-lined rack.
- Serve warm sprinkled with powdered sugar.
- Optional toppings: apple pie filling, cherry pie filling, whipped cream, ice cream, cinnamon and sugar, fresh berries.
