Lemon Chiffon Cake Recipe: How to Make It image

This moist, airy lemon chiffon cake was my dad's favorite. Mom revamped the original recipe to include lemons. I'm not much of a baker, but whenever I make this dessert my family is thrilled! —Trisha Kammers, Clarkston, Washington

Number Of Ingredients 16

7 large eggs, separated, room temperature
2 cups all-purpose flour
1-1/2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 cup water
1/2 cup canola oil
4 teaspoons grated lemon zest
2 teaspoons vanilla extract
1/2 teaspoon cream of tartar
FROSTING:
1/3 cup butter, softened
3 cups confectioners' sugar
4-1/2 teaspoons grated lemon zest
1/4 cup lemon juice
Dash salt

Steps:

  • Preheat oven to 325°., Sift flour, sugar, baking powder and salt together twice; place in another large bowl. In a small bowl, whisk egg yolks, water, oil, lemon zest and vanilla until smooth. Add to flour mixture; beat until well blended., Add cream of tartar to egg whites; with clean beaters, beat on medium speed just until stiff but not dry. Fold a fourth of the whites into batter, then fold in remaining whites. , Gently spoon batter into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on lowest oven rack 50-55 minutes or until top springs back when lightly touched. Immediately invert pan; cool completely in pan, about 1 hour., Run a knife around sides and center tube of pan. Remove cake to a serving plate., In a small bowl, combine frosting ingredients; beat until smooth. Spread over cake.

I was fortunate enough to happen upon this recipe for my great-grandmother Iny’s Prune Cake a few years ago.

FOR THE CAKE:
1 c. Prunes
1 c. Sugar
3 whole Eggs
1 c. Canola Oil
1 1/2 c. Flour, Sifted
1 tsp. Baking Soda
1 tsp. Nutmeg
1 tsp. Allspice
1 tsp. Cinnamon
1 c. Buttermilk
1 tsp. Vanilla Extract

FOR THE ICING:
1 c. Sugar
1/2 c. Buttermilk
1/2 tsp. Baking Soda
1 tbsp. White Corn Syrup
1/4 c. Butter
1/2 tsp. Vanilla

Steps:

  • Preheat oven to 300 degrees.Cover prunes with water. Bring to a boil and cook until soft and mashable, about eight minutes. Remove from heat, drain water, and mash on a plate. Set aside.Mix together oil, sugar, and eggs. In a separate bowl, sift together dry ingredients. Combine wet and dry ingredients, add buttermilk and vanilla and stir gently until just combined. Throw in the mashed prunes and stir gently to combine. DO NOT OVERMIX!Pour batter into buttered baking dish (9 x 13 or so) and bake for 35 to 40 minutes. DO NOT OVERBAKE OR INY WILL PADDLE YOUR BOTTOM.While cake has five minutes remaining, make the icing:Combine all icing ingredients in a medium saucepan over medium heat and bring to a slow boil. Boil without stirring for 5 to 7 minutes, or until icing starts to turn dark. Do NOT allow icing to reach soft ball stage; icing should be caramel in color, but not sticky like caramel. Icing should be easily pourable.Remove cake from oven and pour on icing immediately.Allow to rest on the counter. Serve warm.NOTE: There is absolutely zero “prune effect” associated with this cake. The end.

Alternate adding the flour mixture with the milk with the mixer on medium-low until all the ingredients have been incorporated. Scrape the sides of the bowl and turn the mixer on high for ten seconds. Remove bowl from mixer stand and fold in trinkets so that they're evenly distributed. (Note that you can also tightly wrap trinkets in small pieces of aluminum foil if you prefer.) Use an offset spatula to even out the surface, then bake for 22 to 25 minutes, until cake is just set and a toothpick comes out clean. Sift together the powdered sugar, cocoa, and salt, then add gradually to the mixer, scraping the sides as you go. (When combined, mixture will be very thick/crumbly.) Hold the funnel over the hot oil and remove your finger from the hole, letting the batter drop in a spiral pattern all over the surface of the oil. It will look like lots of individual pieces at first, but as you continue to add batter, the pieces will fuse together. Cook until the batter floats and the underside is golden brown, about 30 seconds. Flip with tongs and cook until golden brown on the other side, about 30 more seconds. Transfer to a paper-towel-lined plate and repeat to make 5 more funnel cakes. Dust with the cinnamon-sugar and serve with whipped cream and/or fruit sauce, if desired.
