Refreshing fungus recipe - Simple Chinese Food image

Refreshing fungus, a must-have for summer. My mother doesn't like to eat fungus, but because of its good nutritional value, she changed it to make it for her. Friends and colleagues think it tastes good.

50 grams Fungus (water hair)
1 piece Shallots
4-5 Dried red pepper
2 tablets ginger
3 petals garlic
3 pcs Millet spicy
2 tsp Soy sauce
2 scoops Balsamic vinegar
0.5 tsp Sugar
A tree parsley
a little Cooking oil

Steps:

  • Soak dried fungus in water for about 1 hour;
  • Wash the fungus and blanch in boiling water for about 4 minutes. Remove and rinse with cold water, drain and set aside. (You can put some ice cubes in cold water or put the cleaned fungus in the refrigerator for 10 minutes)
  • Wash coriander, green onion, ginger, garlic, onion, millet pepper, dried red pepper and set aside.
  • Shred onion and ginger; pat garlic into minced garlic; cut coriander and green onion into sections; cut dried red pepper into sections; cut millet pepper into circles.
  • Take a bowl and put millet pepper, dried red pepper, shredded ginger, coriander, green onion and a little minced garlic in the bowl. Pour an appropriate amount of edible oil into the wok, add pepper to fragrant, and pour directly into the bowl when the oil is hot.
  • Drain the fungus, add onion, minced garlic, coriander, sauce from step 5, light soy sauce, salt, and vinegar. (Adjust the acidity, spiciness and saltiness according to personal taste)
  • After stirring evenly, put it on a plate.

Healthy Chinese style snow fungus soup with red dates and wolfberries

dried snow fungus ( ,25g (around 3/4 head, remove the yellow end)
9 red dates
1 tbsp. wolfberries ( ,??)
50 g to 80g rock sugar
1.5 L water ( ,fore high pressure cooker or 2L for regular cooker)

Steps:

  • Soak snow fungus firstly until soft. Then move the yellow end. Hand shred into small chunks.
  • Prepare a high pressure cooker, place the sow fungus pieces in, add red dates and rock sugar. then add enough clean water. For high pressure cooker, press soup. For regular pot, continue cooking at least 40 minutes after the the liquid boils.
  • Add wolfberries and continue cook for 5 to 10 minutes.
  • Serve either warm or chilled.
