This is my 90-year-old grandmother's recipe. Very simple.

Yield 1 - 9 inch tube cake

Number Of Ingredients 16

2 cups packed brown sugar
3 cups all-purpose flour
1 tablespoon baking soda
2 tablespoons ground cinnamon
2 tablespoons ground cloves
2 tablespoons ground allspice
2 tablespoons ground nutmeg
4 eggs
2 tablespoons lemon zest
2 tablespoons vanilla extract
½ cup brandy
1?½ cups raisins
1?½ cups chopped nuts
1?½ cups dried mixed fruit
1?½ cups butter, melted
1?¾ cups brandy

Steps:

  • Preheat oven to 225 degrees F (110 degrees C). Grease and flour a tube pan.
  • In a large bowl, combine sugar, flour, soda, spices, eggs, lemon rind, vanilla, 1/2 cup brandy, fruit, nuts, and melted butter or margarine. Mix thoroughly. Pour into prepared pan.
  • Bake for 1 hour, or until a tester inserted in the center comes out clean. Cool on a wire rack.
  • Wrap cooled cake in foil. Sprinkle 2 tablespoons brandy over the cake everyday for 2 weeks.

Decorate this rich buttery Christmas fruit pound cake with candied cherries.

Cake
1 1/2 cups sugar
1 cup Land O Lakes® Butter softened
4 ounces cream cheese, softened
6 large Land O Lakes® Eggs
1 tablespoon freshly grated orange zest
1 tablespoon vanilla
1 teaspoon rum extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 cup green candied cherries, coarsely chopped
1/2 cup red candied cherries, coarsely chopped
1/2 cup raisins
Glaze
3/4 cup powdered sugar
1/2 teaspoon rum extract
3 to 4 teaspoons milk
Green and/or red candied cherries, if desired

Steps:

  • Heat oven to 350°F. Grease and flour 12-cup Bundt or 10-inch tube pan; set aside.
  • Combine sugar, butter, cream cheese, eggs, orange zest, vanilla and 1 teaspoon rum extract in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour and baking powder. Beat at low speed until well mixed. Stir in 1/2 cup green candied cherries, 1/2 cup red candied cherries and raisins.
  • Spoon batter into prepared pan. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely.
  • Combine powdered sugar, 1/2 teaspoon rum extract and enough milk for desired glazing consistency in small bowl. Drizzle over cooled cake. Garnish with additional green and red candied cherries, if desired.

Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.
