Fruitcake Cookies with Rum Glaze Recipe: How to Make It image

Like fruitcake—only better! If you make these cookies nonalcoholic, you may wish to increase the rum extract for richer flavor. —Sheila Joan Suhan, Scottdale, PA

Number Of Ingredients 19

1 cup golden raisins
3/4 cup dried cherries
1/2 cup diced dried apricots
3/4 cup water
1/4 cup rum or additional water
3/4 cup chopped pecans
1/3 cup diced crystallized ginger
1/3 cup diced candied orange peel
1 cup butter, softened
2 cups sugar, divided
2 large eggs, room temperature
1-1/2 teaspoons rum extract
3-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
GLAZE:
3 cups confectioners' sugar
3 to 5 tablespoons 2% milk
3 tablespoons rum or additional milk

Steps:

  • Place first 5 ingredients in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, until liquid is almost absorbed, 12-15 minutes. Cool completely. Stir in pecans, ginger and orange peel., Preheat oven to 350°. Cream butter and 1-1/2 cups sugar until light and fluffy, 5-7 minutes. Beat in eggs and extract. In another bowl, whisk together flour, baking soda and salt; gradually beat into creamed mixture. Stir in fruit mixture., Place remaining 1/2 cup sugar in a shallow bowl. Shape 2 tablespoons of dough into balls; toss in sugar to coat lightly. Place 2 in. apart on parchment-lined baking sheets., Bake until golden brown and just set, 11-13 minutes. Remove from pans to wire racks; cool completely., Mix glaze ingredients. Drizzle over cookies.

Instead of baking or giving a traditional holiday fruitcake, make fruitcake cookies instead.  Fruitcake's first cousin in cookie form contains all the ingredients you love in fruitcake--candied cherries, chopped pecans, cinnamon, allspice and rum--just in smaller bite-sized portions.  Santa will be very pleased if you leave a plate of these treats out for him when he stops by your house this Christmas Eve.

3 cups chopped pecans
1 (8-ounce) package chopped dates
1 (8-ounce) package candied pineapple, chopped
1 (4-ounce) package candied red cherries, chopped
1 (4-ounce) package candied green cherries, chopped
2 cups all-purpose flour, divided
½ cup butter or margarine, softened
1 cup firmly packed brown sugar
2 eggs
1 teaspoon baking soda
2 tablespoons buttermilk
½ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground nutmeg
2 tablespoons rum or wine

Steps:

  • Combine first 5 ingredients in a large mixing bowl; add 1 cup flour, stirring to coat well. Set aside.
  • Cream butter in a large mixing bowl; gradually add sugar, beating well. Add eggs, beating until well blended.
  • Dissolve soda in buttermilk. Combine remaining flour, cinnamon, allspice, and nutmeg. Add to creamed mixture alternately with buttermilk mixture and rum, beginning and ending with flour mixture. Stir in fruit mixture.
  • Drop by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets. Bake at 325° for 12 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks.

This is a fantastic mixed fruitcake. I usually start making these in October for Xmas presents. Sometimes I make them in mini pans too. Absolutly delicious and a welcome gift. As they are sitting I add more rum to the soaked cheesecloth about every week to keep them moist. I found this recipe in a Montreal newspaper (The Gazette) and have use it for 20 years now. Time does not include overnight marinating time.

Place loaves in pan on rack for 15 minutes to cool completely. Remove paper or foil and wrap in rum soaked cheesecloth and wrap in foil. Store in cool, dry place for several weeks.
