4 medium bananas, mashed
1/3 c. vegetable oil
1/2 tsp. almond extract
grated zest of 1 lemon
1 1/2 c. quick-cooking rolled oats
3/4 c. whole wheat flour
1/2 c. raisins
1/2 c. chopped apricots
1/2 c. chopped dates or prunes
1/2 c. chopped pecans, walnuts, or almonds

Steps:

  • Bake for 15 to 20 minutes, or until lightly browned. Remove to a rack to cool.
