A delicious, healthy muesli you can make the night before

100 g oats
2 tablespoons white chia seeds
1 tablespoon pumpkin seeds
350 ml milk of your choice (I use almond or coconut)
maple syrup to taste
1 dash of all-natural vanilla extract
1 lemon
2 ripe pears
1 pinch of ground cinnamon
1 small handful of dried sour cherries or cranberries

Steps:

    1. The night before, put the oats, chia seeds and pumpkin seeds into a bowl or container, pour over the milk, and add the maple syrup, vanilla and a squeeze of lemon juice. Mix well, then cover and pop into the fridge overnight.
    2. In the morning, chop the pears into little chunks, sprinkle over the cinnamon and add the sour cherries. Either layer them up with the oats and seeds in a glass or bowl, or just run out of the door with everything in a little container.

We don’t buy a whole lot of pre-packaged snacks and breakfast items at home. I try to keep healthy options on hand at all times.

2 whole Refrigerated Pre-made Pie Crusts
1/2 c. Fruit Jam, Any Variety, Plus 1 Tablespoon For Icing
1 tbsp. Cornstarch
1 Egg
1 c. Powdered Sugar
1 tbsp. Heavy Cream (or More As Needed)
Sprinkles

Steps:

  • Preheat oven to 400ºF. Line a baking sheet with parchment paper and set aside. In a small bowl, mix ½ cup jam with cornstarch. Crack the egg into a second small bowl and whisk. Flour a large work surface and lay both pie crusts out on it. Roll the circles to 11 inches across. Use a knife or pizza cutter to cut the edges off, about 1 inch off all sides, to create two 9-inch squares. Then cut each square into three 3-inch stripes, or 6 total.Spoon 1-2 tablespoons of jam on one end of each strip. Brush a rectangle of egg around the jam, to glue the sides together. Fold the dry end over the end with jam.Use a fork to crimp the edges together on all sides. Repeat with remaining pie crust strips. Move the pop tarts to the prepared baking sheet. Bake for 15–18 minutes, until golden. Cool.After the pop tarts have cooled for several minutes, whisk powdered sugar, 1 tablespoon jam, and 1-2 tablespoons cream together to create an icing glaze. Spoon over the top of each pop tart and immediately sprinkle with sugar sprinkles. Let the icing dry, either on the baking sheets of on a dry rack.Serve warm or at room temperature.

    2. Peel and halve the onion, slice into 1cm-thick wedges, then slice the chicken lengthways 1cm thick and toss both in the marinade. Leave in the fridge for at least 1 hour, or preferably overnight.
    3. Prick the whole aubergine all over with a fork. Blacken the whole peppers and aubergine over a direct flame on the hob, or in a griddle pan on a high heat, until charred and blistered all over.
    4. Pop the peppers into a bowl and cover with clingfilm for 10 minutes, then scrape off most of the black skin, discarding the stalks and seeds.
    5. Pinch the skin off the aubergine and trim off the ends. Nicely slice it all 2cm thick, dress on a platter with the juice of 1 lime and a few picked coriander leaves, then taste and season to perfection.
    6. Cook the chicken and onions in all that lovely marinade in a large non-stick frying pan on a medium-high heat for 6 to 8 minutes, or until cooked through, turning halfway.
    7. Peel, destone and finely slice the avocado, and squeeze over the juice of half a lime.
    8. Warm the tortillas in a dry frying pan for 30 seconds, then keep warm in a clean tea towel. Take it all to the table, with the feta and the remaining coriander leaves, and let everyone build their own.

    1. Place a medium pan over a high heat and add the dried fruit and 150ml water. Cover and simmer for around 5 minutes, or until the water has been absorbed, then leave aside to cool.
    2. Sift the flour and a pinch of salt into a large bowl, then rub in the butter and suet until it resembles breadcrumbs. Mix in the sugar and the soaked dried fruit, then gradually add the milk, stirring continuously to combine.
    3. Grease a 1.5 litre pudding bowl with butter. Cut a circle of greaseproof paper to roughly the diameter of the pudding bowl and grease lightly with butter. Scoop the dried fruit mixture into the pudding bowl, then cover with the greaseproof paper, butter-side down. Place a double layer of tin foil on top, scrunching it around the rim of the bowl (if it has a lid, then simply place that on top instead). Wrap about 2 metres of string twice around the rim, tie in a double knot, then attach the end to the opposite side with a double knot to make a loose handle – this will make pulling the bowl out at the end a lot easier.
    4. Place a deep pan over a high heat and place a saucer upside-down on the bottom. Gently place the pudding bowl into the pan, topping up with boiling water so the bowl is half submerged. Pop the lid on and simmer gently for 1 hour 40 minutes, or until the sponge is firm, but still slightly sticky in the middle, checking the water levels from time to time to make sure it doesn't dry up.
    5. Carefully remove the bowl from the pan, take off the tin foil and greaseproof paper, then leave it to cool in the bowl for a few minutes. Meanwhile, heat the brandy in a pan over a low heat.
    6. Place a large plate face-down on top of the pudding bowl and carefully turn out the spotted dick. Bring it to the table, pour over the brandy, then set it alight. Serve with a good helping of custard, and enjoy!
