3/4 cup fruit juice (apple, orange,etc.)
1 tablespoon cornstarch
3 tablespoons sugar
1 1/2 tablespoons crushed fruit or 1 teaspoon fruit, rind
1/2 teaspoon fruit flavoring

Steps:

  • Combine fruit juice and cornstarch in a 2 cup microwave-safe measuring cup.
  • Stir in sugar and crushed fruit or rind.
  • Microwave for 2-2 1/2 minutes at High, stirring once, until thickened.
  • Stir in flavoring.
  • Cool.
  • Serve.

What a delightful fruit salad! The orange marmalade glaze is sweet but has a little bit of tang from the lemon. This was great at room temperature, but even better after it sat in the fridge for a few hours and the flavors blended together. We had some extra strawberries so we threw them in too. So yummy!

Number Of Ingredients 10

1 can(s) pineapple, chunks, reserve all the juice
2-3 - bananas
1 bunch(es) red seedless grapes
1/2 pint(s) blueberries
1 jar(s) small jar maraschino cherries, drained
- any other fruit you would like to add
4 tablespoon(s) sugar
4 teaspoon(s) cornstarch
4 teaspoon(s) orange marmalade or apricot preserves
2 teaspoon(s) lemon juice

Steps:

  • Drain pineapple, reserve all juice.
  • In a small bowl, combine all your fruit. I always squirt some lemon juice over my bananas before adding so they don't get brown and yucky looking. Set aside.
  • In a small saucepan, combine the sugar, cornstarch, and reserved pineapple juice. Bring to a boil. Reduce heat, and simmer till thickened. Remove from heat and add the marmalade or preserves and the lemon juice.
  • Let cool for a couple of minutes, then pour the glaze over your fruit and toss gently to coat. Keep in the fridge. It won't last long!!

  • "Combine the water, fruit/berries, sugar, and lemon juice in a large saucepan on high heat. Stir thoroughly while bringing it up to a boil. After the mixture begins to boil, reduce the heat to low, and allow cooking for up to ten minutes, occasionally stirring throughout.
