Fruit-Filled Puff Pancake Recipe: How to Make It image

This fruity puff pancake is a top breakfast request at my house. The combination of cinnamon, blueberries and bananas is wonderful. —LeAnne Senger, Oregon City, Oregon

Number Of Ingredients 9

3 large eggs
1/2 cup 2% milk
1/3 cup all-purpose flour
1/4 teaspoon salt
3 tablespoons sugar, divided
1 tablespoon butter
1-1/2 cups fresh or frozen blueberries, thawed
1 medium ripe banana, sliced
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 400°. In a large bowl, whisk eggs, milk, flour, salt and 1 tablespoon sugar until smooth. Place butter in a 9-in. pie plate. Place in oven 2-3 minutes or until melted., Tilt pie plate to coat evenly with butter. Pour batter into hot plate. Bake 10-12 minutes or until sides are puffed and golden brown., Meanwhile, in a bowl, combine blueberries and banana. Remove pancake from oven. Top with fruit. Mix cinnamon and remaining sugar; sprinkle over top. Cut into wedges; serve immediately.

A delicious easy Breakfast Fruit Filled Puff Pancake. A great healthy pancake with fruit and cinnamon and sugar topping. Packed with lots of eggs! Pretty enough to serve to company but easy enough for a busy week morning.

Number Of Ingredients 9

2 Tbls Butter
2/3 C all purpose flour
1/4 tsp. salt
6 eggs light beaten
1 C milk
2 Tbls sugar
1 tsp. vanilla-optional
Cinnamon and sugar
2 C Fresh or Frozen Fruit (I like to use blueberries,…because I have sooo many Smile or Strawberries and Bananas or whatever!)

Steps:

  • Preheat oven to 400 degrees
  • Place butter in a 9×13 pan. Place pan in oven so the butter melts. Meanwhile, in a small bowl combine flour, 2 Tbls. sugar and salt.
  • In a large bowl add eggs and milk and (vanilla if using) ; whisk until smooth.
  • Remove hot 9×13 pan from oven and pour ingredients in pan. Bake at 400 degrees for 15 – 20 minutes or until edges are puffed and golden brown.
  • Meanwhile, chop up fruit you will be using..
  • In a small bowl. Combine cinnamon and sugar.
  • Remove Puff Pancake from oven…It’s beautiful! Just to let you know..it won’t stay that way..the puffiness starts to deflate..but it’s still fun and deeelish!
  • Spoon fruit mixture onto pancake; sprinkle with cinnamon and sugar.
  • Cut and serve!
