Christmas Fruit Cake {With Cake Mix} - CakeWhiz image

Easy Christmas fruit cake recipe with cake mix, homemade with simple ingredients. Soft and moist but firm. Full of candied fruits, nuts and aromatic spices.

4 Eggs (Large)
1 1/4 cups Applesauce (Unsweetened)
1 Spice cake mix
1 container Candied fruit and peel mix (16 oz. container, Equivalent to about 1.5 cups)
1/2 cups Roughly chopped nuts (I used pecans and walnuts)
1/4 cup All-purpose flour

Steps:

  • In a large mixing bowl, add eggs, applesauce and mix until smooth.
  • Add spice cake mix and mix until just combined.
  • In a separate bowl, mix together candied fruits, nuts, flour until nuts and fruits are properly coated.
  • Stir this fruit and nut mixture (along with any excess flour) into the cake batter gently. Do not rigorously mix!
  • Pour batter into 2 greased and floured or lined loaf pans (Dimensions: 8x4).
  • Bake at 275 degrees F for about 1 hour 45 min or until an inserted toothpick in the center comes out clean. Keep a close eye from the 1 hour 30 minutes point.
  • Remove from oven and allow it to cool completely.
  • Run a knife along the sides of the cakes and remove from pan.
  • Enjoy as is or top with frosting, syrup or glaze. Enjoy!

This delicious cake comes together fast, starting with a cake mix. I think the flavor is very subtle, and the cake is quite moist. The original recipe had a syrupy sweet icing on it, but I added the coconut/brown sugar on top instead, and I think it makes this a nice snacking cake. (*NOTE: I used a fruit cocktail I've found that has guava, mango, etc., and found the pieces a little large, so I chopped it up a bit before adding to mixture. The regular fruit cocktail with grapes, etc., should be fine w/o that)

1 (18 1/4 ounce) box yellow cake mix (I use the kind with pudding in the mix, Betty Crocker)
1 (16 ounce) can fruit cocktail, undrained
1 cup coconut, plus
1/2 cup coconut
2 eggs
1/2 cup brown sugar

Steps:

  • Preheat to 325*.
  • Combine cake mix, fruit cocktail with juices, 1 cup of coconut and eggs in a large mixer bowl.
  • Blend, then beat at medium speed for 2 minutes.
  • Pour batter into greased 9x13 pan, or two 8x8 pans.
  • Sprinkle batter evenly with remaining 1/2 cup of coconut, and then 1/2 cup of brown sugar.
  • Bake at 325* for 45 min (if 9x13 pan; about 30-35 min for two pans).
  • Serve warm or room temp; stays moist for several days.

This is my SIL, Becky's, Great Great Uncle Lee A. Harley's Dark Fruit Cake recipe. It has also won several blue and red ribbons at the South Carolina State Fair in the 60s and 70s. It is a 7 pound cake. Becky says this one is her favorite! She also says that her Great Great Uncle Lee was a very sweet Christian man who loved the Lord. Before he started baking cakes he was a candy machine vendor and he had a following of children who would come to meet him every week when he came to fill the machines and he would give them gum and tell them about Jesus and his love for them.   • NOTE 3: I also searched the Sauer's web site and they do not have a "cake spice" which is why I have made the assumption that "all spice" is what is meant. It may be that they used to have a spice with that name, but they no longer do. You, can, of course, choose any spice you like. In a medium bowl, whisk together the flour, pie spice, baking powder, and salt. Set aside.  In a large mixing bowl, beat butter with a hand mixer until smooth. Add the sugar and beat on medium speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating until well incorporated. Beat in the vanilla. With mixer on low speed, slowly add the flour mixture, beating just until combined. With a spatula, fold in the candied cherries, nuts, and soaked fruit. Divide the batter evenly among the two baking pans.  Bake for 2 hours or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pan for 10 minutes. Run a knife around the cake to release it from the edges. Remove and place them on a cooling rack. Generously brush tops and sides of the cakes with brandy or whiskey (you can also use simple syrup). Cool completely. Store the cakes tightly wrapped in plastic wrap for up to 6 weeks.

    1. Preheat the oven to 180ºC/350ºF/gas 4. Grease and line the bottom and sides of a 20cm springform cake tin with greaseproof paper.
    2. Using an electric whisk, beat the butter with the caster sugar until light and creamy. Add the eggs one by one, beating each in well. Fold in your ground almonds, poppy seeds, the lemon zest and juice and the sifted flour. Spoon the mix into the prepared cake tin and bake in the preheated oven for 40 minutes or until lightly golden. You can check to see if the cake is cooked by poking a cocktail stick right into the sponge. Remove it after 5 seconds and if it comes out clean the cake is cooked; if slightly sticky it needs a little longer, so put it back in the oven. Allow the cake to cool on a rack.
    3. Make your lemon syrup by heating the sugar and lemon juice in a pan until the sugar has dissolved. While your cake is still warm, make lots of little holes in the top with a cocktail stick and pour your syrup over.
    4. To make your icing, sift the icing sugar into a bowl and add the lemon zest and juice, stirring until smooth. When your cake is almost cool, put it on a serving plate and pour the icing carefully over the top. If you pour it on to the middle of the cake, then let gravity disperse the icing down the sides, you get the ‘drizzle’ effect! Give it a helping hand with a spoon if you want.
