Lotus Root Curry - Lotus root cooked in a tangy tamarind sauce that goes well with white rice or roti.

Number Of Ingredients 16

Lotus Root - 1/2 lb (I used half of the frozen packet)
Small onions - 6 (Sliced) (If you do not have small onion add 1/2 of a big onion.) Garlic - 6 cloves (chopped)
Green Chilies - 2
Tomato - 1/2 (chopped)
Tamarind - lemon sized (soaked in 1/2 cup warm water)
Coriander Powder - 1 tsp
Sambhar Powder (or Kuzhambu milagai powder) - 2 tsp
Red Chilly Powder - 1 tsp (optional, add if you like it extra spicy)
Turmeric Powder - a pinch
Salt - to taste
Cilantro - for garnish
For Tempering
Gingelly Oil - 2 tbsp
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Curry Leaves - 1 spring

Steps:

  • Extract the pulp from the soaked tamarind and keep it aside.
  • Heat 1 tbsp of gingelly oil in a pressure cooker and temper the mustard seeds, fenugreek seeds and curry leaves.
  • Add the sliced onions, garlic, green chillies and lotus root and saute for few minutes.
  • Add the tomatoes and the dry spice powders (turmeric powder, coriander powder, sambhar powder and chilly powder).
  • Add the extracted tamarind pulp, required water and salt.
  • Adjust the seasonings, close the cooker and cook for 3 whistles.
  • After the pressure has gone down, open the cooker. By now the gravy must have thickened and the oil separated.
  • If you want to thicken the gravy little more then let it simmer for some more time.
  • Finally add 1 tbsp of fresh gingelly oil and chopped cilantro.

2 medium-sized lotus roots, cut into 1/8 inch or thinner slices
1/2 cup rice flour
2 TB cornstarch
1 1/2 tsp Ener-G
3/4 cup fizzy water (add a little more if needed to thin the batter out)
vegetable oil for frying
salt
ponzu sauce or equal parts mirin and soy sauce, for serving

Steps:

  • Heat several inches of oil in a small saucepan over medium-high heat.
  • While you are waiting for your oil to heat, combine the rice flour, cornstarch and Ener-G in a shallow and wide bowl. Add in the fizzy water and gently whisk until well combined.
  • Test your oil by throwing a pinch of batter into it—if it sizzles immediately, you are ready to fry. Dip one of the lotus root slices into the batter, remove it, then hold it horizontally for a second or two to allow the batter to run through the holes in the lotus root.
  • Fry only one or two pieces of lotus root at a time until golden brown—about three minutes. If you make too many at once, the cold batter will reduce the oil of the temperature and you’ll end up with soggy and oily tempura.
  • Place the fried tempura on paper towels to drain, and sprinkle with a bit of salt.
  • Serve it with ponzo sauce or make a similar sauce by combining equal parts mirin and soy sauce.
