Steps:
- Stir together egg, salt, garlic powder, paprika, and pepper in a large bowl. Add potatoes and cheese, and stir to combine. Sprinkle with flour, and toss to coat.
- Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high. Add 3 heaping spoonfuls of potato mixture to skillet (about 1/3 cup per patty), and press gently with spatula to flatten. Cook until golden brown and crisp, 3 to 4 minutes per side. Transfer patties to a plate lined with paper towels, and repeat in 3 more batches with remaining potato mixture and oil. Serve immediately.
HASH BROWN PATTIES BREAKFAST CASSEROLE – CATHERINE'S PLATES
Steps:
- In a large skillet over medium high, heat butter and oil. Add in peppers and onions and cook until softened. Break up uncooked sausage into skillet and cook until browned.
- Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Lay out 9 frozen hash browns in bottom of baking dish in one layer.
- Spoon cooked sausage, peppers and onions over the hash browns evenly.
- Sprinkle 1 1/2 - 2 cups of shredded cheese over the sausage, peppers, and onions.
- In a large bowl whisk together eggs, milk, salt, pepper, and garlic powder. Pour egg mixture over cheese in baking dish.
- Place foil over baking dish tightly. Bake in preheated oven for 25 minutes. Remove foil and bake an additional 20 minutes until eggs are set, cheese has melted and is golden brown. Let sit on counter for 5-10 minutes to set up.
- Garnish with sliced green onions, if desired. Enjoy.
