EASY FRITO PIE - ONE HAPPY HOUSEWIFE
A super easy Frito Pie recipe that makes for the perfect quick dinner for busy weeknights. With only 4 ingredients, you can throw this meal together in no time. A warm and comforting classic that the family will love.

Steps:
- Pre-heat oven to 350°.
- Warm the canned chili in a saucepan over medium heat on the stove.
- First Layer: Spread a layer of Fritos, about ⅓ of the bag, along the bottom of a 12" skillet or 13" x 9" baking dish. Spoon half of the chili evenly over the Fritos and then spread one can of Rotel over the chili.
- Second Layer: Add another layer of Fritos, about ⅓ of the bag, and then sprinkle half of the shredded cheese evenly over them. Spoon the remainder of the chili evenly over everything.
- Third Layer: Add one final layer of Fritos, spread the second can of Rotel evenly over the Fritos, and sprinkle the remaining cheese evenly over the top of everything.
- Bake on the middle rack of the oven for 25 to 30 minutes, or until the cheese is melted and bubbly. Allow the Frito pie to cool for a few minutes before serving.
- Serve and enjoy!

- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.

- Brown ground chuck with garlic in a pot over medium-high heat. Add tomato sauce, Rotel, salt, oregano, cumin, and chili powder. Cover and reduce heat to low. Simmer for 30 minutes. Add drained and rinsed beans. Stir to combine, then cover and simmer for another 20 minutes. Mix masa with water, then add to the chili. Stir to combine and simmer for a final 10 to 15 minutes. Set aside. Serve by slicing the Frito bags open lengthwise. Pile in chili and cheese, and diced onion if using. Serve immediately with plastic forks. A crowd-pleaser!
