Gordo's Frijoles Con Queso Recipe - Food.com image

Growing up on plain old beans and cornbread, this bean dish was far different and richer from any I had ever had as a kid. The recipe came from my Grandmother, but she may have gotten it from my uncle in New Mexico. At any rate, these beans are delicious and there is an added meat garnish that can be made to dress it up a bit. Adjust the seasonings on the garnish to suit your own tastes.

Yield 1 pot of beans, 8-12 serving(s)

Number Of Ingredients 10

2 cups dry pinto beans
6 cups water
1/2 cup lard
1/2 cup cheddar cheese (chopped or shredded)
salt (to taste)
1/2 lb hamburger
1 (8 ounce) can tomato sauce
1/2 teaspoon chili pepper (or to taste)
1 teaspoon chili powder (or to taste)
1 cup lettuce (torn or chopped)

Steps:

  • Put beans and water in a large pot, cover and simmer, stirring often, until tender - about 2 1/2 hours.
  • About 1 1/2 into cooking time, add salt to taste.
  • If the beans need more water before they are done, add boiling water to the pot - do not add cold water!
  • When the beans are tender, there should not be much liquid in the pot.
  • If there is a lot of liquid, take some of it out and either save it in case you need it.
  • Add the 1/2 cup of lard to the now tender beans.
  • Simmer uncovered - very slowly - for 1/2 hour.
  • Watch it carefully and stir often.
  • If the beans get too dry, add some of the reserved liquid if you have any, or add a bit of water.
  • Add the cheddar cheese.
  • Cook until it melts.
  • Serve it up.
  • If you'd like, you can make the meat garnish as follpws:.
  • Cook up the hamburger until browned.
  • Add the tomato sauce and spices.
  • Serve over the beans with the lettuce.
  • You can also add tortillas and make tacos.

2 cups fat-free refried beans (455g)
1/4 cup fresh salsa
4 ounces reduced-fat cheddar cheese, grated
1/4 cup fresh cilantro, chopped (optional)
low-fat tortilla chips or non-fat tortilla chips

Steps:

  • Combine all ingredients except cilantro in a small saucepan, and heat just until cheese melts.
  • (Microwave Directions: place in a microwaveable dish and heat for 2–3 minutes.).
  • Top with chopped cilantro if desired and serve with chips.

  • Minced cilantro (coriander leaves) for garnish Combine the beans, onion, and garlic in a large pot and add in three times the volume of water. Bring to a boil and simmer covered for 1 1/2 hrs, till the beans are tender. Drain and add in salt. Mash the beans along with the onion and garlic thoroughly, or possibly process in an electric food processor till fairly smooth. Heat the oil in a pot over moderate heat and saute/fry the finely minced onion till lightly browned, about 10 min. Add in the beans and gradually stir in the shredded cheese till thoroughly combined and heated through. Garnish with minced onion and cilantro. Serves 6 to 8.

Existen varias maneras de cocer frijoles, pero las dos más comunes son usando la olla de presión y la olla regular. A mí me gusta usar la olla de presión porque me ahorra mucho tiempo. A continuación te daré las dos opciones.

Mix and transfer to greased 2 quart. casserole. Saute/fry zucchini 3 minutes and add in tomato and spices; cold. Spread on top of bean mix. Mix together dry ingredients for cornbread topping.
