Got this from a friend at work---no clue where she got it, but it's yummy! It's not on my diet, but I can splurge, right?

1 lb lean ground beef
1/2 cup fat-free refried beans
1/4 teaspoon sea salt
3 tablespoons chili powder
1/4 cup taco sauce (smooth)
12 white corn tortillas
vegetable oil
6 slices American cheese
1 head lettuce, shredded

Steps:

  • Brown beef over low heat, break up into fine pieces. Drain.
  • Add beans, smash & mix into beef.
  • Add salt, chili powder, & 2 T of taco sauce; remove from heat.
  • Wrap tortillas in towel & microwave 20-30 seconds to soften.
  • Heat oil in deep fryer.
  • Spread meat mixture on center of each tortilla.
  • Fold tortilla over & press closed.
  • Drop each taco into hot oil & fry until crispy.
  • Drain cooked tacos on paper towels.
  • Open shells & add 1/2 slice cheese, lettuce, and taco sauce.
  • Spend next several hours on treadmill.

SALSA:
1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (4 ounces) sliced jalapeno peppers
1 small onion, quartered
1 teaspoon garlic salt
TACOS:
1 pound ground beef
1/2 teaspoon salt
12 corn tortillas (6 inches)
1/2 cup canola oil
1 cup shredded cheddar cheese
4 cups shredded lettuce

Steps:

  • In a blender, combine the salsa ingredients; cover and pulse until salsa reaches desired consistency. Transfer to a large bowl; cover and refrigerate., In a large skillet, cook beef over medium heat until no longer pink; drain. Sprinkle with salt. Meanwhile, in another large skillet, fry tortillas in oil in batches just until crisp; drain on paper towels., Fill tortillas with beef; sprinkle with cheese. Fold in half. Serve with lettuce and salsa.

  • Season the beef with the chili powder, salt and cumin. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the beef and cook for a couple of minutes, then dump in the salsa. Stir and cook until the beef is totally done inside and the liquid has reduced, about 6 more minutes. Turn off the heat and set aside. To fry the tacos, heat a couple of inches of vegetable oil in a large cast-iron skillet over medium-high heat. Place some beef in the middle of a tortilla (don’t overfill it—this can get messy!), then fold the tortilla in half and clamp shut with a pair of metal tongs. Carefully lay the taco on its side in the oil and use the tongs to hold the taco in place for a few seconds. Once it stays put, repeat with 2 more tacos. Fry until light golden brown, 30 to 45 seconds per side. One at a time, remove each taco from the oil with tongs, holding it sideways to let the oil drip out. Place on a stack of paper towels, then fold the paper towels around the taco and give it a few gentle shakes to remove the excess oil. As you continue frying, have someone place some cheese inside the fried tacos (gently pry them open a bit). Let sit until ready to serve—the cheese will melt slightly. Top with lettuce, tomato and hot sauce, opening up the tacos to get the toppings inside.

Stir to combine the filling and transfer to a large bowl. Wipe out the skillet and spray with cooking spray. Place one tortilla in the skillet and top with 3/4 cup of the beef filling and a half a cup of cheese. Let cook open for 1 minute, then fold over and press down on the taco with a spatula so it seals closed. Cook for another 2 minutes then flip to the other side for another 2 minutes. Just get them nice and browned on both sides, it only takes about 5 minutes total for each taco. Transfer to the oven to keep warm and repeat with the remaining tortillas.
